    Okay, I’m officially hooked on you. I too make so many things in my home kitchen. Buying anything in the store gives me pause today. However, that being said, you have given me so many ideas to refine, reuse, and rethink many of the ways I have done things.     You can also replace the cucumbers with zucchinis and they stay crisp and taste the same.

    I’m planning a charcuterie board for Christmas Eve. These quick pickled vegetables will really be a compliment to the meats and cheeses. I plan to make them a few days beforeChristmas eve. Since grocery stores have become a little unpredictable with their stock, this recipe will allow me to purchase whatever is available at the time.

    Mary... I am so inspired by another one of your excellent videos as I have not done this kind of picked vegetables before. I was thinking of making pickled yams this time. I have always loved to do pickled beets with onions but for some reason did not venture into other kinds of pickles... I guess I am getting more adventurous in my old age... Thanks so much... I always enjoy the "sweetness of your being" and your velvet voice...

    Thank you Mary! I tried this recipe out yesterday. I pickled cucumbers (added garlic) and the bay leaves worked great. I also made pickled brussel sprouts.

    I am very interested in pickling again. My favorite was Dilly beans. I made those and took 2 pints to a family gathering. I put them on the table while I took a few minutes to tend to my baby. When I came back I found they ate every single dilly bean and I had none. They said they were too good. Next time I will took much more.

    I have used oak leaves to make my LF pickles. I keep a bag in my freezer. I haven’t had a problem with quick pickles staying crisp by themselves. They usually don’t last long enough either. Usually gone I na day or two!

    Oooh, Yeah! I have GOT to try this quick recipe as soon as possible. When my dad was alive, he used to make this but he'd can it (which seemed like a lot of work to me.) I haven't had it since those days long ago. Thank you so very much, Mary, for this recipe. Please keep them coming.

    I am so exited that I found the best tip of cucumber pickling with tanins as I pickle all the vegetables and store in jars for daily use ..This is something I can't avoid in my menu ..Love this.Tq

    Wow, Mary! This is great! I love pickled vegetables and have recently become interested in trying it myself. This is a great start. I''m curious, does celery pickle well? Would you need to use the bay leaft or teabag for celery or is it firm enough that it won't get mushy? Can't wait to try your recipes!

    Love your explanation about training a newbie’s palate. Is a MUST if you are the home cook feeding others, transition needs to be smooth sailing, otherwise you’ll lose your “to be converted” audience. ❤️

    I appreciate the idea of topping with apple vinagar, perhaps wine vinegar - both to replace some of the industrial white v which is apparently damaging to our digestive liner.
    Great tip with grape leaf for making stuff crisp - safer than bulgarian aspirin?
    We love Mary's kitchen!

    If people have a co-op in their area they should check that out. They have spices at a very reasonable price. I get all my spices at my local co-op and the only that is above $2 an ounce if Vanilla Beans. Spices are so light weight that you can get a lot for very little money

    i tried a raspberry teabag for bread & butter pickles which added a yummy fruity taste to finished crispy pickles, thinly sliced using a mandeline. Am going to try licorice teabag with some veg using mary’s recipe

    Now this is timing. I just picked up 11 cauliflower and a bag of jalapenos. I plan on making a dozen quarts of pickled veggies today and dehydrating the leftover veggies. I also have broccoli, celery, zucchini and kohlrabi.

      I just made some pickled Cauliflower. One head made one half gallon jar. I did not know you could dehydrate Cauliflower. What would you use it for?

      @@Amywazwaz06 I make a lot of stews so I use the dried veggies in them. They don't have the same texture of fresh but the flavour is pretty much the same. With the cost of fresh veggies here in winter we save and store as much as possible.

      Yes, you have to refrigerate them and they can last at least 2-3 months possibly even up to 6 months but you will eat them long before that. And thank you for the kind words!! Love, Mary

    Thank you for sharing Mary. I really enjoyed watching the process of pickling. Oh and the crunch when you tasted it, so good. I have been making kombucha tea and have some vinegar from over brewing. Can I use kombucha vinegar instead of white vinegar?

      It’s best within the first 6 months but can last up to one year with some softening of the veggies. ❤️🤗❤️

    Hello, Mary.
    I've started watching your videos and I think that learning from your teaching is marvelous. My father pickled dilled pickles, hot banana peppers, and mixes of them for hot pickles. But once and a while he wouild pickle whole green tomatoes. Do you have a recipe for pickling green tomatoes? I'm not sure I could do it where I'm living {an apartment). Although, I might try. Anyway, I'm going to start making my own kefir (I think the "e" is pronounced like the "e" in "Ed". I think the "fir" is pronounced like the word "fear". Please keep doing what you are doing. It is thrilling to learn all of these traditional and wonderful things.

    I've already made your pickled vegetables a couple of times and they are wonderful. Took 2 quarts to a get together and most of it was eaten! I'm thinking that if I change the spices a little, I could make pickled vegetables for Chinese stir fry. Cook the rice, put it into a sauce pan and add the vegetables with a little bit of soy sauce. I know I would change out the allspice (just don't like it) and add garlic and ginger. Do you have any other spices/changes you would recommend?

    So I’ve learned that checking my international section of the grocery store has many of the same spices but far cheaper .. I also have a small Mexican Tienda near me and they have lots of great spices for far cheaper than my grocery store.. my husband got me a wonderful traditional Mexican cook book so I visit that store regularly... I got 15 grams of bay leaves for $0.99!!!

    Hi Mary! Thank you for your very informative videos! I am very new to canning preserving and pickling. I want to pickle vegetables that I can store for months. What would I do instead of storing these in the fridge? Would I do the water bath? Also, I want to use cauliflower, celery, okra, carrots and jalapenos...would this be an ok combination? I have searched everywhere for this and haven't found anyone using okra and celery in the combination. Thank you very much in advance for any suggestions you have. Elsie

    Hello Mary, Thank you for sharing this recipe. As I am flying solo, I am always paring down recipes and using ingredients in multiple applications so as not to waste. One head of cauliflower is a bit much all in one go; this recipe here gives me an alternative for the remainder of the head. I really enjoy pickled vegetables as a pickle alternative with a sandwich or a burger and even as a low cal snack when I am craving something salty! Other cauliflower pickling recipes involve an overnight salting of the cauliflower which always put me off. This recipe is simple and "quick" and I have already placed cauliflower on my shopping list for next week. I do have one small questions: how do you think this recipe would hold up to water bath canning for longer term storage? Take care. ~kendra

    So with these pickling, you don't need to wait days or weeks to consume? Do pickling also have the same health benefits as ferments?

      Hi Zoe, Great question. Yes, these are ready in about an hour once cooled. They don’t have the same benefits as ferments, however, you can add a quarter cup of raw apple cider vinegar to the brine once it has cooled which will add probiotics. 🤗

      Thank you! Yes, you can use ACV. But you may want to dilute it a bit with filtered water so that the pickling is not too strong. Love, Mary

    Ok..so I'm going to put this question on every channel I follow that does canning...lol...so if some of you see me & my question...you'll know why! Here it is:
    A couple of years back, I picked up some canning jars at a garage sale. A very nice older lady said, "All these boxes (there were 3 if I recall) have my canning supplies & I haven't done it in years! So you're welcome to everything for $10!" I took it all but didn't do any canning that year...I can't remember why... busy with work I think..
    Anyhow...this year I've been a mad canner...I've been re-stocking supplies & such. We recently cleaned out our basement & I found this box under the stair...and lo & behold it was one of the boxes I'd bought from this lady. I got so excited because it was FULL all sorts of lids & rings & seals & labels... even glass lids which I've never used before!
    Sorry for the long story...but now to the point...
    I've checked the seals...most are fine...anything that seems otherwise I've thrown out. Many boxes look like never even opened... three of which have an actual date stamp - OF JUNE 29, 1976!!! SERIOUSLY!! But they seem fine! Do you think I should go ahead & use them??
    Now I did think when I looked inside this big box...that the printing on all these little boxes did seem a wee bit out dated/old fashioned...
    I wish I could post a pic here...lol
    What do you all think?? Cause I'm game to try!

    Mary, I want to make either a green tomato pickle or a watermelon rind pickle. Each using pickling lime. Do you think I would have good results if I were to eliminate the sugar and substituting an “ alternative sugar “ ? It scares me to potentially messing up that AMOUNT of pickles for my family! Thank you.
