i have little algebra knowledge, but at 3;43 ish in the video, you do the y values 7-3 on top, is there a specific reason for that, and should i be doing that if a similar situation appears, or is it the bigger numbers we put on top

Yeah so he uses an equation y2-y1
By x2-x1 the 2s being the biggest number(maximum in a graph) and x1 (being the minimum in a graph) its slope intercept form so the biggest number goes first then subtracted by the smaller number hope this helps my english isnt very good
