    Why not sew the top edge around with right sides together leaving an opening to turn? Top stitch to close the opening?

      Val uses the method in the video so she can position her handles/straps exactly where she wants them. You can do it the other way if that works for you, it just requires more measuring and is harder to reposition if you get it wrong.
