- Legendary salmon fishing guide Herb Good shows you how to fillet a big salmon. He demonstrates how to fillet a salmon fast, at almost less than 1 minute. Fillet a fish and prepare the salmon for an easy smoked salmon recipe using Smokehouse Products famous Big Chief or Little Chief Electric Smokers.
I like this guy! I can truly sit down drink a beer with him and listen to his stories all day long! And eat the wonderful filet of fish that he produces!
Great job, simple efficient explanation, and demonstration. I hope this skill will never go out of style and will help preserve tradition. Thank you for sharing.
“Never put your hand in front of the knife”. Proceeds to do just that. Haha. Great video and an amazingly good eating fish!
*@**2:22** I take a large metal soup spoon and in a single motion I scoop a long ribbon of meat from tail towards head.*
@@1nvisible14 We do also. It really gets all the meat. The scrapings are great for patties, chowder, dips....
He still did a beautiful job on his fillets tho
Great he returns the precious leftovers to the river. Beautiful fish
Not great he could have done a very good soup with the leftovers
Or he could have made it into makeup. Yeah, it's an actual ingredient in makeup.
Fish scales, not fish bones.
yummy makan mentah2
bobbinbach jwa😧
Id love to have an ice cold beer with this guy. Great video sir.
lol the dog licking the fish in the background
OmertaCS he’s got the head- best part!!!
Thank you for using the whole fish and thinking for the environment.
Joe Hanna finally the first person in consideration
Hardin Origins now, while I agree with you, was that really necessary? I mean, you have a right to say what you want, but do you have to? It's not bad to think about the environment, I just don't care.
Hardin Origins Well ok if you don't want to be happy you don't have to be
The funny thing is, He does not tell you you can make soup of the head. He also throws away the back bone, you can make soup/stock of that. Throwing it back to the river does really not make any sense because salmon don't feed from the river, they just reproduce there.
Moving on to the real part, man was that some nice handcrafting! God dayum that went fast and nice result as well! Looking dam good sir.
Hardin Origins You're sick of Environmentalism?
That's quite odd. Are you not a Creature that exists on a Planet which demands a sustainable environment to properly run its course? People who share immoral and unfounded ideals like you are what everyone should be tired of....
there's something about watching really skillful people do their thing
Slick spider kill. Didn’t go unnoticed
He always washed the fish- with clean water . I like it . Very clean.
You're very experienced in what you do. Thank you for sharing your recipe.
Thank you for returning the waste to the river. One of the most important steps. Cheers
I love salmon. You really don't need to do a whole lot with it to get great flavor. Salmon sashimi, smoked or just baked with a fresh squeeze of lemon is amazing. In my opinion, there is no other fish that even comes close to be my favorite.
i'm a meat cutter by trade and cut fish pretty well i think. That nice man knows what he's doing. Trust me. Nice work sir .
DirtRider WR250R I was just gonna say the same thing.
What kind of knife do you recommend? I'm generally cleaning salmon anywhere from 4 to 25 pounds. I have a nice dexter, though the knife he was using was making that thing look like butter. (And yup, sharp knife is rule one) .
I'm sorry but I cut salmon for 3 years professionally and in my opinion he was not good. He do know how to do it but he was far from good.
ruclips.net/video/UYqPWfOOWzk/видео.html This guy is a lot better.
I do it a lot in my job to, that is not the good way.
thanks for putting up such informative videos. i grew up in the Pacific northwest and would fish the runs with my great grand father until he passed. being so young i missed out on a lot of this information and i feel like i missed out on a bit of my culture not picking up on these skills. i now live in the midwest and sometimes pick up large salmon from a local fish house who has to fly them overnight from the PNW. your videos on the smoking cures and techniques have helped me achieve some of the flavors of home. i really appreciate what you do here.
Thanks! We were given four salmon and I hadn't cleaned one in 30 years, so you really helped us out!
Thank you sir this has been one of the most informative videos I've seen on this topic.
My favorite part here is the dog licking the salmon on the deck behind him! Haha
Best part is that he knows what his business is. Perfect fillet cut👌
it really wasn't, that was painful to watch, knew it was going to be a bad job when i saw how much meat he took with the dorsal fins
The guy knows what he is doing. And he cares about the planet. Good guy.
Very nice preparation tips! I just spent 60000$ for a boat and equipment and now it’s time to go chase that 28 pounder!
I think you did great on this video. There are lots of great tips.
Thanks for making this
You sir are an artist!!!! What a beautiful fish and great skill with a great blade!!!
Why is this so satisfying to watch
Its nice of you to share this with us, thank you! I think you would be very interested on learning the Ike jime technique from the japanese and also their way to clean and fillet the fish is very good :)
I've seen a lot of people filet fish, but this has to be the most sustainable way i've seen! good job sir!
I don't know why, but it's so satisfying to watch. 😂
I Think too!
Very smooth and a very good way to use the whole fish nothing waste that’s important great job sir
Great video. I now have myself a piece of old conveyor belt thanks to this video. Thanks for the informative tips
Hope this man is still with us
This gentleman does that work as it should be done ! Thanks sir , that work was done preety good
Duuuude you forgot about the cheek meat. It's so good
Wow, that was beautifully done. You cut down that fish in 2 minutes flat. Nicely done =D
I do the exact same thing with the meat left on the bone after filleting the meat off the bone. I make a Salmon Chowder with it that everyone really likes. Especially good on cold rainy days for dinner.
A man who dosen't waste fish is a pro and this man is a pro.
I live on B.C.coast and have fished for large Chinook\King salmon for many years. Like DirtRider whose comment below is germane to my experience, I cut fish pretty well. However, that
said, this gentleman showed me several twists of the knife of which I was unaware.
Thank goodness you don't have to be an old dog like me to learn an old trick. (There may be hope for some of you young dogs as well unless you know everything already)
Thanks for an excellent video.
you've been doing that you whole life!!...it shows.... thanks
These types of videos make me SO HUNGRY!!! Why do I keep watching them!?! LOL
nice use of all the meat good job
This guy made that look way easier than it is....believe me
"Never put your hand in front of the knife" 1:34 proceeds to put hand in front of knife
He meant "don't try this at home".
wow boner you sure are smart
Doner Kebab it’s for you loonie tunes generation. Guy knows what he’s doing just trying to protect your insignificant one. Suddenly half of generation is walking with frankie four fingers lol.
Seen
I noticed that to when he turned the fish over
i love the fact that the dog is licking the fish in the background
The dog is just licking the fish ugh I love it 😂
You can also scrape the backbone with a spoon if you're planning on grinding it down, the knife method looked good for smoking cause you get thin slices!
4:50 he kills a spider lol and continues lol 😂
Them colors and head is some of the best eating throwing away some good eating
Very quick and clean. Though had said @ 1:16 never putting your hand behind the blade while he's cutting down one side. Then the next side he literally put his own hand behind the blade. Thankyou , I'll be mindful to heed your warning even if you don't!
WHAT I WOULD NOT GIVE FOR A WHOLE BUNCH OF SMOKED SALMON AT THIS VERY MOMENT! Thanks for making me incredibly hungry with your goddam video, lol!
You know that the head where the spine is located has some of the best meat.
Ha
That’s what she said!!
Let's face it. Not a single one of us are actually going to do this 😂
i live on van isle thats the way i do it
@@billoldfield2843 same here! I'm out in Sooke
Thanks for fillet teaching Mr Salmon
this is the most satisfying video on RUclips
Herb Good has been filleting fish for quite some time. i always return my leftovers to my crab pots!
This gentleman is good because now I'm starving. :)
1:45 The dog is licking the fish in the back😂
Thank you for showing how to cut a big salmon. That’s how I learned to fillet my salmon haha 😃🥰
Thank you sir, very educational and you explain things in easily understandable lay person's language.
Finaly someone that can fillet without any spill :)
Thank you..that helps ur a great teacher my friend
Awesome work 👏 even the dog is helping pre clean one of the salmon. I’m cooking a filet portion soon.
I work for a charter service in Seward AK. I have always found it to be easier to teach beginner with a fish head on so you have something to grab on to. you have some very nice fillets though, it is a big king and you didn't butcher it like most people who cut in a sawing motion. a better way to clean your fish flesh off is take the knife and slide it against the fish softly to take all the slime and gunk off. Spraying it with water cab ruin the flesh, because salmon meat is very delicate.
Thank you keep all waters clean and share for all to enjoy tight lines and singing reels .
+Razor Wing , My Fav is to Marinate a nice fillet in a gal zip bag, with 3 tbls of soy sauce, 1 table spoon D'jon mustard 3 Tbls honey & a pinch of both black pepper & Garlic powder. Marinate for a minimum of 2 hrs, Over-nite is better,, Toss bag a few times to get all the fish a chance in the marinade ,, Grill over charcoal brickets with chunks of beach dried cottonwood. I like king salmon the best for this but Pinks also are very good this way. It just melts in your mouth! kodi
love that you try to get all the meat you can!
I am late to comment but very well done! Thank you for sharing this!
Excellent video. The "Take Home" lesson for me was to clean the meat on the backbone for the smoker. I was pleasantly surprised how many shavings I got. The only thing I questioned was smoking the belly fat, which I generally throw away, because it is where the toxins concentrate. A fish that size is generally 2 to 3 years old.
LOL the dog is tasting the salmon on the ground.
The dog behind is having a good time with that head😂😂
beautiful! I envy your life when i heard the birds sing
The white portion he threw away was the best part
The spider at 4:49 coming in like "hell, ima get some food" and quickly goes "shit shit shit shit". Lol.
Very nice description and well done job sir.
In my opinion he just smoke some top tier chef there. Amazing skill.
Best 7 mins of my life.
The way I fillet I do the bone how he does cleaning backbone, no waste. Not as fast as streaking down the back, but little meat loss. But flies need food too, so leave a little bit.
All that filleting looks really good
Excellent video! My father likes to use the head of the salmon for soup! Makes for a tasty broth! ☮️🖖🏽
Dang, watching this at 11 pm and now all I can think about is some salmon, lol wait, I think I have some leftover salmon in the fridge, not nearly as good as fresh smoked salmon but it will have to do. Love those nice thick filets, yummmmmy. Salmon is my favorite fish for sure.
I dont know much about this stuff, but man that looked like masterful work! Thank you for sharing.
I like how he tossed the collars
Looks like my knife of choice Forschner 402-10 breaker, Great video thank you.
why am i watching this... im never going to have to do this.... yet its so interesting
Really nice, good job. Clean and simple.
that dogs is having him a good ole time licking those fish XD
Just amazing....watching you doing that fillets looks like it would be so easy ! Many thanks for share it
Another life lesson learned!!Thank you
Dog in the background with tail wagging made this video a complete one.
The dog was licking another fish placed on the ground LOL
I'm 27 with no job, no money and living in my parents house but atleast now I know how to filet a salmon. 😌😌😌😌
4:50 presses a fly with his knive before cutting his favorite piece..
Lol. I only came to comments to see if anyone else saw that.
LOVE the fact that you have your Electric work-sharp knife sharpener close by! I've got one as well great thing it is indeed, easy to make sure your knife is sharp, so hard at times to filet with dull blade. Got mad last summer on dull knife did some looking around and was a good deal. Oh nice Video as well lol.
I take a spoon, and scrape all the meat from the bone after I fillet, then I make salmon burgerSS, and make soup with the head to get the most out of my catch, 90% of people will fillet and throw away the head and carcass.
they can't be bothered with the best parts,.specially soup..they rather eat it raw..All I can see is the worms when they do that !
L. J.P. Ever had sashimi?
Bless him for helping the environment
TJ’a k you for making this video. You truly are an artist!
I've never cut the fish lengthwise. Looks like a good idea
Much, much better brined and cold smoked, also the salmon cheeks are great 👍
Don't put your hand ahead of the knife - and the very next fillet he does just that
Sandstorm9562 you know the old saying. do as i say, not as i do.
His dog is licking his dead salmon behind him
Sandstorm that advice was just for newbs like you.
Nick Dawn fuck off please.
Sandstorm9562 haha totally did it hilarious. I'll tell you as a commercial fisherman for over 20 yrs that coho is NO WAY 28 pounds at best it's 16 plus even in alaska a 28 pound coho is freaking giant they average 10-12
That’s pure gold!!!!
After watching so many Fillet this is the first time saw a person said the truth belly part is the best and saved it, may people cut that peice and throw a way, also saved lot of meat and did not waste this is a real way to do it
look at those slabs, those hunks of fish. wow!
