- I was driving through the Sinaloan jungle on my way to a town called San Ignacio. Upon arrival I was told there's a woman on the side of the road that makes the best traditional Mexican breakfast in town. I had to stop by for a visit and see what the locals are eating in this remote part of the country. I was given chilorio which is a typical Mexican breakfast from the state of Sinaloa. We had some Mexican tortillas to go with as some Mexican veggies as well as fresh Mexican cheese which I have yet to try. The total per person was $4.50 USD. The owner runs the shop by her self so I gave her a little extra to help out. She is a hard working woman cooking up some delicious authentic Mexican breakfast. Wow, Volpe & Sofie! this reminds me so much of your food discoveries in India… the tortilla looks similar in shape and texture to a roti or paratha, the cheese was like a paneer - the Indian cottage cheese and then the Mexicans eat with their hands and most often use one hand to tear the tortilla, scoop up the gravy and put in the mouth! That proves the world is round and you get some similarities across cultures.
By the way, Volpe your looks with puffed eyes suggest you had a party the other night and were hungover 😵😜

Here's what I love about this breakfast... it's honest and straightforward. It's cooked from the heart of the locals deep in the jungle country. You can taste the cuisine while getting a taste of what their life is about - yes you can taste this through the meal... you can always taste the love (or lack of love)... this is what is called "soul food" in the US. Mexican soul food? Maybe, maybe not, but it's definitely rooted in love, culture, its local life... and that's what you're tasting... at least that's what I see. Amazing!

You're right except that Mexico is not just a jungle. That's Venezuela or Brazil. Mexico has jungles, deserts forests, mountains, beaches, it has cities and small towns. There's a little bit of everything
That is about as authentic as you can get! I love simple outdoor kitchen and setting, amazing!

I am glad that Sophie was happy with the breakfast ( super happy to see her eat with you and also happy to note that she is an eggetarian) ! The chef served you the breakfast with love ! I agree with you that the best way to get food tips is from the locals like the gentleman who was candid in his comments on how locals defend their food / cuisine and how to actually eat ( without making a Taco for every dish 😅) ! Was the Shredded - spiced pork tender ? You did mention it was quite flavourful ! In the end you showed your gregarious mature by giving a significant tip to the Aunty !! I have been in phx az since 2002... great job on your videos... its cool to see you enjoying your time in sinaloa... the seafood cocktail debate (hot or cold) is definitely one for the ages 😉😅😅.... I personally like both... but hot campechanas (seafood cocktail) have a special place in my heart... definitely has to do where you grew up around mazatlan or around mochis or culiacan... the debate is a strong as the rivalry of who has the better baseball team 😅... un abrazo hermano ✌

Thats right Volpe. As a chicano most the time a taco is not already made and you have tortillas, you rip a piece off and pickup the food with it. The rest u use silverware. You can make a taco too, half taco...con chilito, sin chilito, whatever the next best bite is going to be.

I found working in Mexico that if you can eat true Mexican food, although you might not know what it is, that you will be immune to any sickness. I attribute my staying healthy during the covid pandemic to my time spent in Mexico.
It's my goal to visit every state in Mexico. With 16 more to go, Sinaloa is the one I want to go to the most. I really like Volpe's Sinaloa videos and I hope he makes a few more.
I cook because I love to do so. It nourishes the bodies of the people I love and the flavors, colors and textures please them. I can fulfill my urges of creativity to my hearts content through slicing, chopping, choosing colors and flavors. I just made mini cheesecake parfaits. I used orange blossom in 3, rose in 3 and lavender in the last 3. I put crushed grahams in some, crushed shortbread in some and crushed vanilla wafers in the others. I garnished with a sprinkling of lavender flower, a tiny bit of orange peel and some with a tiny dried rosebud. That was dessert for a beautiful pot roast. I used a generous amount of spices including three long stems of rosemary, bay leaves, roughly chopped onion and garlic, kosher salt, fresh ground pepper, freshly ground allspice berries and a mushroom sauce. I cubed sweet potato and butternut squash and roasted with onions and garlic cloves drizzled with olive oil and seasoned with above mentioned salt, pepper and chopped fresh thyme and parsley. Feeding others is an act of love and those of us that have enough food often forget to feel grateful. Food is life and always give thanks and try to share with people that don't get enough. Peace is free, spread it around.

When my grandma lost my grandpa in the 60s she opened a shop like this for truckers in a port *town* in Guatemala. She ran the small restaurant herself until her children grew up and were able to support her. These women have different stories as to why they run kitchens alone, and this was my grandma's.

Also the who has the best seafood discussion has been going on for ever. Honestly Mazatlán takes it for the variety, but Los Mochis and Culiacan have their specialties as well. I was born in Mazatlan and have lived in SF California Bay are since 1999.

Chilorio is definitely a Sinaloa thing. I’m Mexican and never even heard of it until I discovered a Sinaloa style restaurant in my hometown of Bakersfield, if anyone is ever in the area I highly recommend Asadero Tecolote for some good authentic Mexican breakfast
