Love the marinade. I used the leftover and rolled into a cylinder like herbed butter. I use a slice of it when cooking down my meat and it’s like a perfect little stock slice which flavours the meat immensely. I’ve used with diced lamb, beef steaks everything and it tastes amazing.

Gonna make this for Easter Sunday, one question, along with the rosemary and thyme, you have mixed herbs what does that consist of?

Won't the butter burn at 350F because that is the smoke point of butter?

you can tell by the color. For a medium 'temp' a leg or roast should be taken out at ~ 130-135F (read by thermometer) and let sit/rest for 10-15 minutes. the one in this video is almost 'well done'@@ArmandoTheGym
