Mysterious BLACK GARLIC Taste Test & How To Cook With It | Snack Break - Tastemade Staff

  • Once you try this savory black garlic on crusty bread and seafood pasta, you won't be able to go back to the ordinary stuff.
    INGREDIENTS:
    1 lb large shrimp, shelled and deveined
    1-2 heads black garlic
    Oil
    2 Tbsp butter
    1 shallot, finely chopped
    1 cup white wine
    Lemon zest and juice of 1 lemon
    Salt & pepper
    1 Tbsp parsley, chopped
    1 baguette
    1 lb linguini, cooked
    STEPS:
    1.) Remove garlic from heads. Place on a cutting board, and use the back of a knife to squish garlic to form a paste. Set a small portion aside for the garlic butter.
    2.) Heat oil and butter in a large skillet. Add shallot and cook until translucent and soft. Add black garlic and whisk to combine. Add white wine, lemon juice and zest. Reduce sauce by half.
    3.) Season shrimp with salt and pepper. Place shrimp in skillet and cook until pink, turning once, about 3-5 minutes. Add parsley.
    4.) Combine butter and garlic to create a paste, then smear over baguette. Broil for 5 minutes.
    5.) Serve shrimp scampi over linguini. Remember to sop up any sauce with the crusty baguette!

    so I've made this before in a simple rice cooker, and just as a warning, cook it outside for the 4-6 weeks. Not in the garage or any enclosed environment something like the backyard. The garlic order is POWERFUL and does not go away easily, and even outside if I still went like 3-4 yards near it, it was intoxicating. Though it was delicious afterwards haha

      Dude, cook it for 10 days only and cover the rice cooker with plastic wrap. Less odor and 10 days is enough

    You can make black garlic at home in a rice cooker. Its just fermented garlic. But make it in a garage or outside....unless you want everything you own to smell like a garlic bomb.

    I really love the taste of it and have been experimenting with producing it for nearly three years. I am still experimenting although I think I have a permanant smell of garlic around me!

    people who doesn't like it must be a garlic hater like my sister. she said she'd feeling dizzy if eat dish with garlic on it. but I like to cook with a lot of garlic, and when she eat my food she didn't feel dizzy. i ask her if she feel dizzy or her stomach hurts, she said, no. and then I said, I put 3 cloves of garlic in it.. it's wierd right ?

      Apparently, people suffering from arrhythmia and other heart conditions can experience symptoms of an irregular heartbeat after ingesting larger amounts of garlic. Maybe this could contribute to her feeling dizzy. Maybe she doesn't get the symptom around you because you stress her the F out and the stress alone keeps her on edge, pumping adrenaline. Maybe

      she probably thinks she’s allergic to garlic. i’m allergic to shrimp and when people sneak it in their dishes, i get an instant reaction and ask if there’s shrimp in it.

    Black garlic is delicious and sweet, but it's hella expensive! I'd rather stick to slow roasted garlic if I want sweet tasting delicious garlic.

      It's really easy to make. If you follow the rice cooker recipes, cover the bulbs in aluminium and let the sit for ten days. Then leave then in the kitchen bench without the wrap for 1 day and then pop them in the fridge

      Cynthia Ayu garlic is only healty if u eat it raw. the good stuf gets burned off when cooked

    That recipe at the end looks good, however, it is not a recipe on how to make black garlic. It's a recipe that contains black garlic.

      You can find it on amazon or most boutique grocery stores. You can also make it pretty easily at home. Basically need to slow cook it for almost two weeks. There's a great video on youtube that tells you how to use a rice cooker to make em.

    Every time I try to cook with it, (even at low temperatures) it burns. What am I doing wrong?

      Maybe you should try moist heat instead of just dry heat (oil). Like in the video it's added after the shallots which has moisture, so the garlic do not burn too quickly.

    I hate this so so much. My mother makes this often and the entire house will smell of rancid garlic. She makes me eat it because i will never eat it myself, and i never put it on my tongue, it tastes horrible
