Yes, interested to see more black garlic recipes. I know to mix it with butter and to do like mayo ( not intended to try that one) Can add into dough for bread. What else?
There are so many uses I don't know where to begin, but I like to mix it in with my tuna tartar, with seared fish, It's great with scallops (black garlic beurre blanc), with pork chops, add it when cooking mushrooms. I like to use it in dishes that I would use balsamic vinegar, I think the flavor profiles are very similar. Black garlic is even good on ice cream!
The chiang kang black vinegar sauce? I'm a big fan of that black vinegar. To me, black garlic tastes closer to balsamic vinegar. But, I do like using black garlic in asian dishes.
