ik a tapestry bead artist and i u se Miyuki Declia beads size 11/0 but i heard from there bead embroidery artist that charolett beads size 13s come in hanks sparkle and their really nice for outlining
I've been doing beadwork now for probably 5 years and I struggle big time getting everything to line up and stay where I want it I usually take apart my work 20-30 tines before I get it to look decent and it breaks my heart that I can't get it the first time any pointers would be much appreciated
Because the thread will spread the beads a little so by the time you get to the end from tacking them down it fills in the space (rather than them going past your line)

No you tack down the thread in between every 2 beads. That is the one needle method where you go back in through the center of the beads. hope that helps? It's hard to explain in text!
