I am a big fan of this curry in dubai. Somebody told me over cooking ( more than 20 - 25 min) of chicken makes the meat tight and rubbery. Anybody can clear this is appreciated 🙏🏻👍🏻

I suggest u first fry the chicken in lito oil to avoid that smell in the soup.
Or u can fry witout oil but must add onions until that first foamy water that comes from the fresh chicken is dried out then start cooking offically .
F u boil chicken u can understand the foamy first water i mean.
I normally remove off the foam until the soup is clear.
