I used the grahams with the cinnamon and added brown sugar last time I made one it was delicious. I totally agree I thought of this before I saw your recipe. Anyway, my daughter loves s' mores. I used a deep dish glass pie pan. I added a package of salted caramel after it cooled. Then made a walnut brownie in a regular pyrex pie pan. It fit perfectly. For the topping I use cool whip but will try to use the marshmallow icing to see if it's better. I'm gonna add Christmas sprinkles to the cool whip chocolate syrup and walnuts.

Nice! If I'm making cheesecake I prefer nutmeg instead of cinnamon... For key lime pie nutmeg or cardamom is a better flavor match for me than cinnamon as well. A decent dash of salt also really brings out more nuances in all of the flavors, especially those in the sweet filling!

Did you grease the pie plate? The last few Graham cracker pie crusts I've made were cemented into my glass pie plate and I'm not sure what I am doing wrong. I did not grease the pie plate and I did not bake the crust. Any suggestions?
I find that happens when it's really cold after chilling - and the after the first slice comes out it's usually okay. I don't usually grease it but you can - it won't hurt it!

Others bake the crust for 8-10min to harden it and then pour the filling in t(mixed berry for me) to bake it for 45 minutes. Well, I'm going to try the later and hope for the best. Ha!
I just refrigerate until I'm ready to fill it with whatever I'm filling it with - then chill until that filling is set. All together I'd recommend chilling at least 30 minutes before slicing (depending on your filling - follow that recipe for that)

If it's empty you don't need to bake on a cookie sheet, although it's easier to remove from the oven if it's on one
