English Translation for people who don't understand: -add five cups of plain flour -two spoons (she uses a normal spoon) of sugar *optional to your taste -two spoons salt -mix the dry ingredients together until evenly combined -then add warm (not hot) oil, in the video it looks like she adds four of the regular spoons - mix evenly - slowly add warm water while mixing and kneading into a soft dough, if you add too much water accidentally then add more flour until your dough is not too sticky but soft and pliable and also no longer sticks to your hands (refer to video) - add a little bit of oil and continue kneading the dough until incorporated - after kneading the dough until it resembles the cooks, cover it with either a clean kitchen towel or clear plastic wrap/cling wrap and let it rest for 20 minutes min. 35 minutes would most likely be the max. The heat will help the gluten in the dough to form and allows the dough to have more elasticity. - separate the dough into equal sized pieces, in the video the lady separates them into 18 medium-small pieces - flour your work surface, your dough piece, and your rolling pin before rolling the dough to be quite thin maybe a 1/4 inch thickness (there's no specific instruction here just to roll the dough) - after rolling apply some oil, seems she used two of her regular spoons and used the back of the spoon to spread it before making some indentations and rolling the dough into itself. - she then twists the dough to make sure everything is encased before slightly stretching it and the wrapping it into a spiral shape and tucking in the end to create the layers. - she then continues the steps with each piece and covers them with cling wrap or once again you could use a clean kitchen towel so that the already coiled pieces of dough don't dry out and create a skin. - after she has finished this she rolls each one into as uniform a circle as you can get before putting them onto a hot frying pan. she continuously moves and flips the chapatis adding oil around the edges, moving the chapatis around to coat before flipping. -you then cook your chapatis until the are golden brown on each side or the color you like them. I make mine different because I like the layers to be more flaky yet soft but this reminds me of my Aunties way so its fun to watch, hope this helped someone because no one should be denied chapati.
