MENNONITE STYLE COOKING for THANKSGIVING | Mashed Potatoes | Date Pudding | Lynette Yoder

Thanksgiving 2022 is in the books! We ate a lot of good food! Mennonite style. I hope this video was helpful and encouraging!

Date Pudding:
Cake:
1 cup dates chopped
1 cup hot water
1 Tblsp Butter
1 tsp. Soda
Stir and let soak fro 20 minutes.
Then add: 1 cup sugar. 1 Egg. 1 cup flour
Bake in 9x13 pan at 350F for maybe 20 minutes? Make sure you check it before.
Glaze Recipe
In a saucepan put 2 Cups cold water, 1/3 heaping cup flour , 2 cups Brown sugar, 1/2 tsp salt, and 1/4 tsp Cinnamon. Stir and bring to a boil. then let sit for a bit and add 1/4 cup butter. and a little vanilla for flavor.
Then layer the cake, the glaze, Whipped Topping and bananas in a bowl, trifle style. Enjoy!!!
Mashed Potatoes:
This recipe is just a bit of a gauge as to how much. It's not specific. Add more or less milk if needed. as well as season to taste
5lb bag of Red Potatoes
1/2 cup butter
6oz cream cheese
1 cup sour cream
about 1 can evaporated milk (or regular can be used) adjust amount as needed
salt
garlic powder
also brown some butter for topping after the potatoes are done
Directions:
Boil potatoes. This will take a good half hour for sure. Drain completely. Pour into mixer bowl or use a hand mixer. Mash Potatoes, stirring several times. Then add Butter, salt & Garlic . Once whipped, add cream cheese & sour cream. Then begin by slowly adding milk until you reach the desired consistency. Stir and scrape the bowl a few times. Then you're done! Yum!
