    Never ever have I heard of using cooked apples with sliced for an apple pie. Fantastic idea.

      They should be bramleys, and lightly poached in large enough chunks so they don’t get mushy. Drain off. Then cook. It’s the traditional British way. Never heard of raw apples going in, yuk!

    Very nice. I never thought of muffin tin or mixing cooked and uncooked apples. I’m going to bake up some for my mates at Experimental Aircraft Club meeting.

    This is my idea of an apple pie where you can taste the apples and buttery pastry. Most modern recipes mask these flavours by adding cinnamon! Thank you .

    Oh, Paul, that looks divine. So simple but speaks to your heart. Why didn't I ever think of baking some of the cooking apples first and mixing with apples I like to eat? Not sure what cooking apples are. In the States, they always advise using Granny Smith's, which are sour and I hate them....so, perhaps those are the ones to be cooked down. I love Honeycrisp and Golden and Red Delicious apples...I prefer a sweeter pie. Never had it with custard or cream. I must say I like a lot of cinnamon in my apple pies, which I will add on my own.
    I would like to have seen you remove the tarts from the muffin tin...it looked like they would still stick and I would end up with apple crumble. Heh.

      Jonagold, Braeburn, and Honeycrisp are others recommended for baking, though I would never bake with Honeycrisp--too good fresh.

      In the UK, cooking apples are Bramleys. Do you have those in the States?

      ​@@supergran1000 Very very rare. Just found some after many years, at a great orchard that's giving them a try! Mostly, we have to sub Granny Smiths or similar-- not the same, and I don't think I would use this recipe without Bramleys.

    So interesting re mixing the apples. I will try that for sure. One question: As a Canadian I never know which apple to use as a "cooker"! Any ideas? One thing I really miss are Bramley apples. Yum!

      Granny Smith is always a good choice in Canada for baking and is easily available! Braeburn and Northern Spy also are good for baking. I will often use three or more varieties in the same pie.

    I was searching for a great fresh apple cooked filling for my mini Dash pie maker. I don't like pie crust with shortening. Yours are essentially puffed pastry based.

    I did exactly by gram and technique each step it was very crumbly and hard to roll thin. tasted fine just to thick in the shells?

    The little pies taste great but I struggled to get them out of the baking tray intact - even though I buttered the tray as advised. Any ideas?

      Hi I'm just a home baker very much inspired by these videos, have you thought of lining your tin with muffin cases and then you can just lift out, I'm going to bake these today and do half lined and half unlined and see how it goes will let you know x

      ​@nova7260 oh that's a good idea, might try it. Or maybe a 2 rectangles of greaseproof paper making a cross underneath the pie so that you can pull it out like a brownie.

    Question about the icing sugar. Here in Canada icing sugar contains corn starch, so my concern is will this affect the pastry in some way. Or did you mean to use confections sugar, which has no corn starch. Love the idea of individual pies never thought of that.

    Hi Paul, i know im watching this 2 years later, the thing I just don't understand why people continue to do these things in a small bowl, get a big bowl and give yourself some room to move, i wasn't even in my teens when i noticed this, I'm 62 now and people still do it. I just don't get it,would go for a bath and get into the sink 🤣🤣🤣🤣🤣🤣

    Even though i sealed the edges and put a hole in the lids the apples bubbled out all over the place. What a mess. Think I’ll stick to large apple pie.

    Cooked apples, no, no. Get slush pie! Use a sweet apple rue and you get a luscious crisp apple pie. Cut apple slices to appropriate size for correct baking.

    I love all of these Easy Bakes episodes but it would be extremely helpful if there was less slow motion on the close-up shots. It is distracting and sometimes makes it difficult to focus on what Paul is actually doing in those close up shots.
