A useful tip for seasoning bagels is to wait until they are fresh from baking and dip them in the bowl of seasoning immediately after. That way your seasoning stays on the bagel without a mess!
I saw your video and immediately made these! I was skeptical because my dough was super sticky but they turned out awesome!!!For one batch I did everything but the bagel seasoning and the other I mixed dark brown sugar and cinnamon and they came out crunchy and delicious!!!!!

Been making bread thru quarantine 1x per week 2 loaves using the King Arthur recipe so I can make it all in one day vs the long rising ones Also made pizza dough and made mini pizzas with salad for dinner tonight! Also turned out well for my 1st time making that
I think you might have needed a bit more egg wash on top before baking to get that perfect bagel outer texture. I basically drown mine with egg wash before baking!

You can also boil these in the salt water before baking. That makes them puff more. Also instead of rolling into a log to shape them, roll in a ball and poke your finger through the middle to make the hole.

I found a plain bread recipe on pinterest and added flavorings like everything seasoning/carmelized onion and jalapeno/cheddar. Soooo good. Enjoy!

I haven't tried sourdough but have made other breads like cinnamon rolls, milk bread, steamed buns and like normal style wheat bread. Sourdough seems so much and kinda intimidates me, hehe, maybe one day I'll give it a whirl. Oh and I have tried bagels, I need to get better at those because they were just ok.

Would totally recommend making bread. You can even do a no knead bread! Most of the time dedicated to making bread/sourdough is letting it rest and proof. Kneading bread is also so satisfying. I hope you give it a try with your yeast!

To make it more chewy try expandex. You can find it on Amazon. I am gluten free and it gives pizza dough it’s chewy texture. I would think it would work similarly here. You would substitute some of the flour for expandex. I may try it with your bagel recipe. If I do I’ll let you know.
I've seen healthy muffin videos/recipes that call for Greek yogurt too, however, a lot of viewers for those videos mentioned that the sourness from the yogurt was still very distinct after the muffins were baked and the muffins therefore did not taste good. Did your bagels have this issue?

I usually make hamburgers at home and I make the hamburger buns on my own and its recipe contains yoghurt so :) it makes the dough better.

After you rolled it to get it to rise and make it chewy you should have boiled them first
