Is the Lelit Bianca V3 with a FG304 pump, Synchronica 2 Heated grouphead and a Gaggiuino/Variegated project, the best way to get the best results in a mid range budget? I mean, I do have a budget, but not to get a Decent. Also, is the Eureka 75 W the best fairly affordable grinder to go along with it?

Hey Lance! Big fan! Love everything you do and stand for. I’m new to espresso but I’m the type to learn absolutely everything about something I’m in to. I’m also a big car guy. I love tinkering with things. One of the main reasons I was drawn to your channel and espresso in general was you experimenting. I was fully committed to buying a Synch because I figured I would love the mechanical feel. The more I’ve learned though it seems like you can only go so far with the experimenting side of pulling various types of shots. I’m really leaning towards a DE because it seems right up my alley in terms of capability to control all variables. I wanted your opinion which route I should go? Obviously the DE can do everything there but is there any other machine you would recommend over that? What about the GS3, Vostok lever, Unica, etc? What’s the machine you personally would want if you wanted the “buy once, cry once” machine? Opinions on grinders are very welcomed as well. Was looking at the Philos, Zerno, P64, etc. then I started thinking maybe I should stick with a DF64 to develop my pallet more. Which would give me time to learn what I really like and time for those brands to dial in a couple of those new models. I would rather get the boss machine now and then upgrade the grinder in the next six months or so when I know my preferences. Thanks!

Hi Lance, I'm in the Netherlands, and visit Hummingbird coffee often. They sell Onyx, and wanted to get some for myself to try. I see that Manhattan Roasters roasts Onyx EU coffee on their Typhoon. Do they roast to your specs? Or their own? I'm just wondering since Manhattan roasts the beans, what's stopping it from just tasting like Manhattan beans, aside from the fact that it's sourced by Onyx. Also, what's your opinion on the fact that a lot of people dislike the Typhoon and Manhattan's (and by this partnership, maybe also Onyx EU) beans since they switched? Think people are overreacting or are the concerns of an ashy, 'flat' and uniform (between different beans) taste based on some truth? Cheers!
hey! I approach the typhoon and dial in differently than manhattan. so far, everyone I know of that has tried it has loved it. we roast a lot lighter than manhattan does. I spent many months working on a different energy approach to roasting and they follow my specs and my dial ins. I also QC every batch roasted every day. I think a lot of the criticism is from a minority of people who find themselves gifted tasters, but also, I have seen some differences. Manhattan loves to use full energy and roast as fast as possible. for me, it mutes some acidity and makes the coffee flat. So, my approach largely is lessening energy to elongate the roast (still sub 5 min) but with a drawn out development, while also roasting to a lesser weight loss than manhattan. onyx eu is some of the lightest coffee in europe currently. about the same, and often lighter, than picky chemist.

That definitely helped me understand Onyx EU/your process in comparison to Manhattan's, and it made me want to try the coffee even more. I've been looking at coffees that are roasted (ultra) light for a while, and think I'll take the plunge once I visit Hummingbird again.

If you like tea like coffee…. Then have you tried tea? Sounds to me like you’d like some Taiwanese Gaoshan or bug bitten oolongs, should have the flavors you are looking for. You can change the intensity with more leaves or stronger brewing. Entry is cheap into the tea world. 😁 all you need is good water (low TDS) and a Gaiwan, and some decent proper Tea.
Oh I'm in the tea game. It's drinking tea exclusively for 4 months that changed me from a natural lover to super clean washed coffees. gaiwans and fairness pitchers everywhere. Big white tea and oolong fan but I can also bang on some puerh

That's why I almost only rely on your reviews. Too often many youtubers' reviews are just too shallow n I can predict what they are going to say.. they just list a few pro n cons.. no depth.
I feel validated that Lance is grinding the pietro the same way I do. Hold at 45 degree angle and cranking it like a jack-in-the-box. As opposed to holding it straight on and cranking it like a fishing rod. 🫡
Not only have they not innovated at all while charging the same high price, but they have been known to bully small EU resellers of other handgrinders by threatening legal action for selling other handgrinders with bent cranks. I have personally seen a few of these letters. So, sub optimal grinder, internal clicks and floating burr, super high price, and questionable business tactics.
@ but you have to concede that most owners are more than happy to own a commandante regardless. I think you do a disservice to those that love these grinders. It is a personal grudge that doesn’t sit well with coffee lovers
@@balmatian it isn't just a personal grudge. I listed things about it I find abysmal for the grinder at the price. let's leave out the 'grudge' and potentially unethical practices. At that price, I want a better build quality. I want external clicks. I want alignment with a fixed burr. The fact of the matter is a cheap kinggrinder k6 can match and improve upon the clarity the comandante gives. the K Plus gives you the same profile, but better, at 30% cheaper. I understand you love your grinder, and that is great. but I am entitled to air MY thoughts on MY channel. and my thoughts, which are shared by countless others (including brewers champions who now all opt away from comandante due to their unwillingness to improve), are that it isn't worth the coin.

Manhattan loves to use full energy and roast as fast as possible. for me, it mutes some acidity and makes the coffee flat. So, my approach largely is lessening energy to elongate the roast (still sub 5 min) but with a drawn out development, while also roasting to a lesser weight loss than manhattan. onyx eu is some of the lightest coffee in europe currently. about the same, and often lighter, than picky chemist.

That definitely helped me understand Onyx EU/your process in comparison to Manhattan's, and it made me want to try the coffee even more. I've been looking at coffees that are roasted (ultra) light for a while, and think I'll take the plunge once I visit Hummingbird again.

If you like tea like coffee…. Then have you tried tea? Sounds to me like you’d like some Taiwanese Gaoshan or bug bitten oolongs, should have the flavors you are looking for. You can change the intensity with more leaves or stronger brewing. Entry is cheap into the tea world. 😁 all you need is good water (low TDS) and a Gaiwan, and some decent proper Tea.

Why do you bash Commandante so much?
Not only have they not innovated at all while charging the same high price, but they have been known to bully small EU resellers of other handgrinders by threatening legal action for selling other handgrinders with bent cranks. I have personally seen a few of these letters.
So, sub optimal grinder, internal clicks and floating burr, super high price, and questionable business tactics.
@ but you have to concede that most owners are more than happy to own a commandante regardless. I think you do a disservice to those that love these grinders. It is a personal grudge that doesn’t sit well with coffee lovers

@@balmatian it isn't just a personal grudge. I listed things about it I find abysmal for the grinder at the price. let's leave out the 'grudge' and potentially unethical practices. At that price, I want a better build quality. I want external clicks. I want alignment with a fixed burr. The fact of the matter is a cheap kinggrinder k6 can match and improve upon the clarity the comandante gives. the K Plus gives you the same profile, but better, at 30% cheaper. I understand you love your grinder, and that is great. but I am entitled to air MY thoughts on MY channel. and my thoughts, which are shared by countless others (including brewers champions who now all opt away from comandante due to their unwillingness to improve), are that it isn't worth the coin.
