Your soft flour tortilla recipe is fantastic! Been using it for 6 months with perfect results. Prefer to use bacon fats (as per your recipe) or pork fats which are easily obtainable here in the Philippines. Everyone here marvels at the "retired American" who cooks here on the mountain. As far as freezing, I usually make a double batch of cooked tortillas, let them cool and freeze them (10 to 12) in resealable bags. No wax paper in between needed. I can take out what I need for a meal since they don't stick together once cooked, and let defrost or heat in microwave for 30 seconds. They keep perfectly in freezer and have no change in taste or texture. You can't tell difference between fresh cooked and previously cooked, frozen and thawed. Thank you for your delicious and easy recipes.

What type of oil did you use here? I’ve frozen these at the ball stage and do notice the oil sort of “bleeding” out when it thaws when using shortening. I roll it around a little to reincorporate the oil and they come out okay - not quite as good as fresh, though. Curious to try the oil and the rolling them out method. Also - thanks so much for your tortilla videos over the years - you’ve saved this displaced Texas girl from the horrors of store bought tortillas.

I like the burrito style tortilla best GOT MORE USES FOR A BIGGER TORTILLA . Don't press them out. Use your finger tips to form the size your want. Then use your palm of your hand to press them out That all is needed. Some use a rolling pen. But i don't! l like mine thicker and wider > So the White Wing Tortilla Flour > calls for 2 c of flour, and 1/2 c of WARM WATER, that suppose to make 8. But my wider, and thicker tortilla only make 5

Your can freeze the store bought or home made tortillas either one. Way to warm them up is? Run water over them. Heat up a skillet or grill, Once hot! Oil it. Slap that wet puppy on the grill > let it bubble! Next turn it over, add you meat or what ever. grab the tortilla slide if off the grill onto a plate and fold it YUMMY

The recipe I use is :
      3 cups all purpose flour
      1 cup hot water
      1/3 cup oil
      1 tsp salt
      1 tsp Baking powder
Combine dry ingredients and then add in wet. After you have the balls made take one and drop it into your flour. It should look like a powdered donut. That's all the flour you need to roll it out. I'm sure her recipe is great too. Everything else she makes is. But remember the powdered donut thing. It changed everything for me.

My Mom had a tortilla press when we were kids, she used to shim the bottom up with about 10-12 pieces of notebook paper, then take a gallon zip-lock bag, cut the sides out, put it on top of the sheets of paper and lift one layer of the bag up, put the dough ball in between and press out the tortilla. I use printer paper and cut it down, it takes less sheets because the printer paper is thicker. I love my tortilla press. I just wish it was big enough to make Burrito Tortillas. I was not using lard until I seen your recipes and love that addition. I use them for lots of things but a smear of peanut butter and jelly or some sliced ham and they go fast and they are so soft..........love them, thanks. The tortillas you buy at the store can't touch home-made.
