Because I can't find lecithin or the Red Mill (or I'm blind🫣) I can't put it in the mix. I end up using 5 cups of flour. I really do want to find the two ingredients I can't find, to see if that will help free up using extra flour. But I will tell you, this bread is so yummy!! I will never cook bread in my machine again!

GREAT!!! I've been getting my lecithin on Amazon lately.
Just a little tip. I proof my yeast before adding to the bread machine pan. I find that I get a better dough this way. I and heat my distilled water in the microwave to about 111 degrees. Remove and add part of the sugar and all the required yeast. mix and set back in the microwave for about 10 minutes DO NOT TURN MICROWAVE ON. Onced the yeast has proofed, I pour it in the pan and add all and wet ingredients then the dry.

The gluten you use, is that called gluten flour

I use my bread maker for the dough only. I have never baked a loaf yet over the last 6-7 years I’ve had it.

Why did you choose the most expensive machine with all the bell and whistles if you just use the dough cycle?
She said because of the heating element in the lid. Helps with the rising of the dough.
