    hi bb8taloovver, cream is the fat that rises to the top of fresh milk that has not been processes or homogenized. You can usually buy it, if you see the instagram cake recipe I asked in the video for people to let me know what it was called where they lived and there are so many different names for it in the comments.

    Hi deaartemis, yes it sounds like the same thing cream can be whipped and will go thick. The cream we buy here is unsweetened and around 30% fat. (Here creme patisserie is a custard used in pastries which is different) Has your brulee 'split' so it looks like oil with little lumps of custardy stuff in it? If so the temp was too high or the water on the outside of the dish did not come up as high as the brulee on the inside. If the brulee boils it will split.

    Hi deaartemis, thanks someone else alerted me to that on the website so it has been fixed.
    When a cow is milked if the milk is left to stand the cream, or fat in the milk, rises to the top and can be scooped off. Most full cream milk here is homogenized to make the cream into tiny enough particles so that it stays in the milk and does not rise to the top any more. Skim milk has had the cream removed.

    Hi Remi, when I was in the states i checked the heavy cream and it is the same as cream here, except here they add a minute amount of gelatin so that it looks a little thicker but it makes no difference in the recipe.

    hi orlendatube, let me know if it works, I seem to remember trying that years ago and the time ti took to melt the sugar also melted the top of the custard.

    you can use Grill on the oven, it gives the same effect as the blow torch and you can do multiple at once

    I know it will warm up the crème a bit but will putting them under a hot grill for a minute or so work as well as the torch? (Great video as always, thanks!)

    its my understanding that you can do teh sugar part on the top without a torch by simply sprinkling the sugar on and then putting them under the broiler for a bit....

    Thank you for your reply! The closest thing that I've found here is whipping cream (it says creme patisserie on the box, but it's meant to be whipped up and it's very liquid), but my creme brulee turned out very greasy and it wouldn't set properly when I used it. Could you please tell me what is the fat percentage in the cream you're using? Is your cream sweetened?
    I'm sorry I'm asking so much, it's just that it's my favorite dessert, and I've been unable to recreate it :(

    actually, after the creme brulle jas chilled, you can sprinkle sugar over them, and put them under the broiler, for 3 minutes or so, to get that crust, after that, cool them for 1 minute and freeze them for 5 minutes more.

      RandomWasTaken it's thickened cream that's available in places like the UK and Australia, it has some gelatine in it but it doesn't make a difference in the final result whether you use that or normal cream.

    I don't have a brulee torch but I do have a candle lighter thingy... Do you think it would be safe to use? It came from a candle shop called Dusk if it helps

      Yes but you have to use fresh raspberries for the sauce because refrozen raspberries are bad for you.
