Thanks! We usually go to a restaurant several times before we make a RUclips video, and therefore, most of our videos show places we wholeheartedly recommend. Per Se was so expensive and difficult to book that we wanted to shoot a video when we had the chance. The meal ended up being less amazing than we had hoped, and even more expensive, so we figured that would make for an interesting video in another way.

I have enjoyed numerous Michelin starred experiences over the past 30 years in my country of residence Belgium but also in my native The Netherlands as well as in France and Germany. Most of our meals in top restaurants cost a fraction of what I saw in your vid and although it's not difficult to spend similar amounts of money in top restaurants, especially in Paris, Berlin or London, we usually avoid such places because I'm simply not prepared to pay so much money knowing I can eat something maybe a bit less fancy but equally delicious for much less. And it's not what I can afford but what I want to pay for good food. Nearby my town of residence is a 1 star Michelin place where the tasting menu costs 80 euro. A classically trained chef serves tasty dishes made with first class ingredients. The wine pairing comes in at 30 euro but the menu price leaves enough space in the budget to splurge on a good bottle. My wife have been dining there with our kids on every occasion worth celebrating the last five years and we were never disappointed. And I would have left there and then, had the waiter asked me if I wanted any "upgrades"! What kind of question is that??? Maybe that's normal in the US (where my father lived, we've been over to visit them and do holidays there at least 15 times) but in normal places in Europe it's simply unheard of and felt as "pushy" by customers. Conclusion: interesting to see what Per Se has to offer but I don't expect to dine there anytime soon!
We felt the same, but it's apparently quite common in some high-end restaurants where the customers simply have too much money, and maybe less knowledge. It's more about dining at the "right" place rather than the best place.
I was feeling uncomfortable when the restaurant asked for “upgrades”. It would ruin your entire experience knowing that your were just having the “basic” without ordering upgrades. Also with the individual upgrades for individual prices it feels like you are in a farmer’s market bargaining with the seller throughout your meal.
ive been asked for upgrades for all of the places ive been too in NYC (trying my first EU michelin one on Thurs, will see if its any different). I dont see it as pushy though. I think most of the NYC guys use it as a way to test out new dishes for when they’re thinking of changing one of the courses on the tasting menu. 80€ is an insane deal for a tasting menu though gj on that, all the ones ive seen personally in NY and europe were im the 110-140 range (euro/dollar’s about equal now so its the same in both) I know a guy who worked at this restaurant, and he agrees that there isnt that big a difference between the michelin one star and three star restaurants - definitely not enough of a difference to justify triple or quadruple price

@@andersandkaitlin in your opinion would you recommend per se or Stone Barns at Blue Hill? Trying to get a reservation for either next month as an anniversary gift. Leaning more toward Blue Hill as it’s alittle more unique then the traditional michelin star restaurants.
No matter the total cost of a restaurant bill, it's unfortunate when you spend a lot of money, (especially on upgrades), and walk away not feeling completely satisfied. The desserts did look really tasty though.

Comparing this to some of the 1-2 star meals I've had in Europe, it feels like Michelin gives out stars way easier in America. You could have an amazing tasting menu here for the price of just that truffle risotto!
That's true. The risotto was insane. I think the entire price is the white truffle, which they were generous with, but still. We wanted more risotto on the plate to go with it.
I'm European and honestly I have never seen a Michelin star restaurant except for when I was on vacation. Is it really that cheap? I thought prices would be horrendous.
I Liked your explanation to every course and the whole Video at all...but i dont agree with the comment that NYC is behind the modern world...why must be everything Like in Europe,scandinavia or spain etc.??? Iam working since 26 years in the Gourmet cuisines and Thomas Keller is a Classic orientated cuisiner...pure,No Chichi,Just amazing taste...is it Not the countless Numbers of various Restaurant types ,which gives the whole gastronomy universe the shape ? They used to offer an extended menu… don’t know if they still do. It’s twice the length of their regular menu and lasts 5 hours. I had it six years ago for a career milestone celebration and I still remember it vividly to this day.
@@andersandkaitlin I remember when I got there and as the maitre d' walked me down the long corridor to my table, he kept whispering "Don't eat the bread... don't eat the bread". Implying that if I wanted to get through the five hours, that I shouldn't fill up fast. But there's no way I'm skipping anything while I'm at Per Se! And then about 1/3 into the meal, as the maitre d' and servers checked on me individually (I dined solo)... one of them asked "Are you doing okay? We're still in amuse-bouches land... we're not even in mains yet." Thanks for the heads-up. 😀
I’ve had some REALLY expensive meals but damn, $180 for truffle risotto is next level. I’ve had some incredibly good whole tasting menu meals for less than that price 😂
I get that everything is top quality and that all of what you've shown is, no doubt, made with a lot of effort. But for more than 700 dollars I would expect decently generous portions and perhaps some zing to the experience. This doesn't really get me excited. Then again, who am I to talk, I'm nerdy dude on a phone on a bus that can't even go to a restaurant. Reeeeeeeeeeee
The concept is kinda like how you get into a cold swimming pool, the initial shock or jolt is what the small portions are about. You want to be left with wanting another bite of something incredible and then bam, another incredible dish starts the process all over again.
It’s not only the effort, everything is made fresh every day, the leftovers from last day get thrown away (not litterally everything but most) The amount of staff, is 3 a 4 times more then for simpler and bigger restaurants. Plates and glasses are usually very expensive, think about 100$+ a piece for a plate, if there is even a small dent on it, it gets thrown away And another crucial thing, the products being used. Have the feeling that most have no idea what it costs. Tuna, foie gras(gooseliver), white truffle, wagyu, and many other expensive stuff. All that they use is expensive, from just a spice, herb to animals and delicacy’s. White truffle is plus minus 2000$ a kg at the moment. The tuna dish not worth the upgrade? There was big ass quennele of caviar on it, and the tuna, you can be sure it’s no ordinary tuna. The caviar on the first dish was also generous Like I said, white truffle is very very expensive, also generous on the plate, but not enough rice 😑 Wagyu, many types of regions and farms, the one is more expensive then the other, depending on quality, plus you have a lot of waste before you can even start portioning the cuts to sell, that’s why wagyu is so expensive in a restaurant. Foie gras, risotto, wagyu, very fatty and heavy products, with 7+ menu, yes you have to control the portions, or else most won’t make it to the end, most of those restaurants have 10+ menus, some even 20 dish menu
And also, you don’t go to those restaurants to get your belly full. You have other restaurants for that. It’s a experience to go to a place like that, from the moment you walk in, being guided to the table, the service, the well thought out menu of the chef, the creativity in the dish, the flavours and you may expect also the perfect combinations, wine as well food. Food that’s being prepared with a lot of knowledge to get the very best out of it. Every single detail that they can think of is being put in a plate and in the restaurant. No, it’s not about getting your belly full, no lol On a personal note, some people should pay attention to how much they eat on a daily basis, many are way passed the amount of food that they need. This plays also a role in why people don’t get this restaurants, different mentality.
I was at Per Se a couple of years ago (sept 2019) and I felt disappointed. 3 stars should be worth the journey, as stated by Michelin, but my experience was not in line with that statement. Service was good but I can't share your opinion. Professional yes but warmth .... Dishes looked promising but i was never overwhelmed by any of them and none of them were surprising. If i compare it vis a vis the Spanish or Belgian top restaurants then either they need to revisit the star allocation or give the European restaurants even more accolades. For the amount of money paid you should have a special experience and it didn't materialize. It might be 3 stars in the USA but not in Europe. i would advise Thomas Keller to go and visit El Celler Can Roca, Noma, Geranium, de Librije, Hof van Cleve, ... to experience genuine 3 stars. Maybe his other restaurant can live up to the expectation but Per Se definetely not. Thanks for your high quality video's by the way.
I feel exactly the same watching this video, even if my only reference point is Guy Savoy as 3 star experience. In Italy we have 1 star restaurant like Arborina or Lido84 providing outstanding experience for 100-150€ range per person which seem a bargain compared to this
We ate at le Bernadin this past year, and although its a wonderful experience. For normal working class people, forking over a $1000 and up for a meal is almost criminal. Sure a wonderful wine arrangement and unmatched hospitality are amazing to experience as you feel like a millionaire or a celebrity for a night. But if you, just like you guys, are familiar with the world of fine dining, you know that there are restaurants that offer similar experiences for a lot less money. The profit margins on the plates are beyond extreme and although I get that you pay for perfection in ingredients and execution, there is a point of diminishing returns. Plus at any NYC restaurant you pay for the fact that you eat in NYC cause everything in this city seems to be more expensive then the exact same thing somewhere else. If we ever hit the lottery we'll try all of them. If you make tons of money and you can afford it regularly , good for you. But if you work a 9 to 5 you will need to save up for this and you can do it a couple times in your life time. Makes it special though!!
It definitely feels like NYC comes at a premium. One could hope that the prices are high so that they can pay their staff a living wage and have people work normal hours, but I somehow doubt that's the case...

This is a refreshing review compared to others that seem to glamorize the experience to the point of incredulity, that it may really be an overhyped money grab. I've wondered if there's a little psychology going on that causes a need to believe it's better than it really is just because I'm gonna need to sell a kidney when I'm done to pay for this thing. Lol. I love this review and the occasional hints of sarcasm swirled in.
There might definitely be some psychology at play for some people, wanting to defend the money they already spent. We dine so regularly that we are able to distinguish good from bad, regardless of the price, I think!
My favorite restaurant in New York is Mission Ceviche on 72nd between 2nd and 1st. Go there for lunch and get some ceviches, super light, quick and the BEST place for me. Such a great atmosphere and true Peruvian cuisine. The dishes I'd recommend are: Classic Ceviche, Yellowfin Tartare, Hamachi Tiridto (Must have), The Avechado is good but then you HAVE to get the Scallops in parmesan and the Arscoz Paella dish. Also such great mixed drinks, get the mojito and at the end of the meal ask for a VIP Shot with either the orange and purple liquid ;). By the way, my beef with these michelin restaurants is that at a point, it's really hard to get so much better. Sure, some bites are incredible, but they're just bites. I think it's a fun experience if you have the money, but really, places like Mission Ceviche are just as good for a FRACTION of the price.
I've been to almost all of the Michelin star restaurants in NYC, Per Se was a very wonderful experience, I hope that you went to their kitchen, they have a live stream to the French Laundry in LA. But for the record, out of the many other Michelin star options, Per Se is low on the list honestly

@@andersandkaitlin Honestly each restaurant has the good and the bad, as for EMP, I haven't been there since they have changed their menu, but even before it was a similar experience to Per Se, good food with nice wine pairing, but nothing wow. regarding Rezdora I would definitely advise you to go there, if you love high quality hand made pasta with depth in the flavor, this is the place, I met with the owners and I can help you get a table of you couldn't find a reservation, the food is a Michelin star quality, for the experience, service and plating they want it to be neighborhood friendly so it's more accessible to people, so it might not be the ideal place for filming for your videos, but it's definitely worth the visit. And for Daniel the food is cooked with heart, you can feel it and taste it, nothing complicated, just good food, he opened a new restaurant Le Pavillon, I would say don't go there, at least not yet, it's a mess, the food and the menu had no vision, they haven't found their path yet, even the wine pairing was a hit or miss. And for Aska, I loved the food, but it was the only restaurant that when I was done eating there, I went to another restaurant right after because I was still hungry, but I still liked it
The price on the white truffle upgrade is absurd. A few years ago I had the white truffle tasting at babbo for a similar price as the upgrade alone and that was 4 or 5 dishes of fresh shaved white truffles. Yea I expect a few premiums for being per se but that’s a bit much.
It definitely felt extremely pricy compred to a lot of other dining experiences we've had. Per Se seems to have a certain target audience of super rich diners that will pay anything.
The attractive restaurant and the Michelin meals were excellent. Very expensive in NYC. I remember I ate in Singapore at the Michelin star restaurant in winter 2018. Didn't remember the name of the restaurant and was closed one year later. Small portions and expensive prices. The truffle risotto at this restaurant was outrageous. I ate the truffle risotto in Bellagio, Italy (Lake Como) was much better and cheap. It was around summer 2018 or 2019
Fine dining . looks interesting ,an expensive but it Soo little food , .I do my own cooking since 8 year old ,never had fast food ,I'm 40 an never been in McDonald's nor any pizza store ever.il learn these recipes an fine tune it to my taste 😁😁

We have not been to the vegan EMP, but before that it was better. Per Se might be slightly better than Jean-Georges, but haven't been there in years, so hard to say. Honestly, not sure we can recommend any of them, haha. Updating our New York guide on our blog soon with all our favorites! Just spent three weeks eating all over town.
Seeing the supplementary menu along with what was given in the normal tasting was disappointing to see due to it just being a copy and paste of French Laundry basic tasting menu items, This should’ve been a cutting edge experience but seeing what you were given is upsetting seeing how it’s not innovative or exciting just … safe. We did Chef's Table at Brooklyn Fare on the same trip! They don't allow any videography. The food was at a higher level, but the service was not. Not too impressed with fine dining in New York, to be honest.

Definitely in that space between one and two stars, whereas the food at Per Se was closer to one star. The food at Chef's Table at Brooklyn Fare was closer to two, but not quite there for us either. Some dishes were big misses. Our best meal at a fine dining restaurant in the U.S. so far is Addison in San Diego! Strong two-star. We wanna go to Jont!
Yes, everything looks good, and expensive it was. But all the food came out in such a small portion, do not know if you were full after all that food 😬
We were ok after this meal. Have been more full, but don't know if it's necessarily a goal to feel stuffed. We did feel like the bread serving was rather small, though.
Jules Verne in Eiffel Tower is about as pricey as I've gotten. But this place is nuts in comparison. This may have passed into "Charge a lot just b/c we can" territory. Ironically, the most expensive dish, the truffles, is the only plate where the price can be justified.
I've been to a few Michelin star restaurants .....what I can say is have a good lunch beforehand else you will need a pizza after. Miniature food I don't think is my style but ok to try 1 time (more than ok if I'm not paying)

@@AT-cy7im European is very broad. We live in Copenhagen which has an amazing food scene. Our favorite restaurant in the world is Frantzén in Stockholm!
Honestly? I don't like the idea of having the "price" of something continuously presented from the Restaurant in this case. For example the risotto (x: this is our risotto. Which is really good, but you want the better version of something we should've already elevated? well, add 100 bucks) At this point, dishes could be compared to art and it's just wrong to judge something by the price. It should be something clear at the start and thought about only after the meal, not throughout said meal.
WOW! After that miniscule set menu I'll bet you got a couple gyros on the street at $10 each! I didn't see anything so, so special especially the upgraded dish, LOL! Yes, that was a waste of money! Per Se not the only game in town! Your money would be better spent elsewhere.
Depends on what you're in the mood for. I love gyros, burgers, etc....but I also understand tasting menus. Theyare designed to serve you, for m any, once in a lifetime meals on the law if diminishing returns. If you have money, and e joy this type of meal...per se is one of the best dining experiences in the world.
Have to agree with you. Definitely more of a one star level when it comes to the food alone, compared to most two and three stars we've visited. The service was at a three star level.

Given my experiences worldwide, Per Se is closer to a lower tier 2 star restaurant at best, if it wasn’t Keller, it would have not gotten 3 stars… a shame to be honest. The dishes looked quite standard, at times a it boring. But if you enjoyed it, it’s all that matters.

I was at Per Se many years ago (2008). Had the lunch menu. It was pretty good, but not spectacular. I'd go back and try again, though.

No matter the total cost of a restaurant bill, it's unfortunate when you spend a lot of money, (especially on upgrades), and walk away not feeling completely satisfied. The desserts did look really tasty though.

Comparing this to some of the 1-2 star meals I've had in Europe, it feels like Michelin gives out stars way easier in America. You could have an amazing tasting menu here for the price of just that truffle risotto!
That's true. The risotto was insane. I think the entire price is the white truffle, which they were generous with, but still. We wanted more risotto on the plate to go with it.
I agree with. Keller could put his name on anything and get 3 stars in a 5 years though haha

I'm European and honestly I have never seen a Michelin star restaurant except for when I was on vacation. Is it really that cheap? I thought prices would be horrendous.

They used to offer an extended menu… don’t know if they still do. It’s twice the length of their regular menu and lasts 5 hours. I had it six years ago for a career milestone celebration and I still remember it vividly to this day.

Implying that if I wanted to get through the five hours, that I shouldn't fill up fast. But there's no way I'm skipping anything while I'm at Per Se!
And then about 1/3 into the meal, as the maitre d' and servers checked on me individually (I dined solo)... one of them asked "Are you doing okay? We're still in amuse-bouches land... we're not even in mains yet." Thanks for the heads-up. 😀

I’ve had some REALLY expensive meals but damn, $180 for truffle risotto is next level. I’ve had some incredibly good whole tasting menu meals for less than that price 😂

I get that everything is top quality and that all of what you've shown is, no doubt, made with a lot of effort. But for more than 700 dollars I would expect decently generous portions and perhaps some zing to the experience. This doesn't really get me excited. Then again, who am I to talk, I'm nerdy dude on a phone on a bus that can't even go to a restaurant. Reeeeeeeeeeee
In this case, we agree!
The concept is kinda like how you get into a cold swimming pool, the initial shock or jolt is what the small portions are about. You want to be left with wanting another bite of something incredible and then bam, another incredible dish starts the process all over again.

It’s not only the effort, everything is made fresh every day, the leftovers from last day get thrown away (not litterally everything but most)
The amount of staff, is 3 a 4 times more then for simpler and bigger restaurants.
Plates and glasses are usually very expensive, think about 100$+ a piece for a plate, if there is even a small dent on it, it gets thrown away
And another crucial thing, the products being used. Have the feeling that most have no idea what it costs.
Tuna, foie gras(gooseliver), white truffle, wagyu, and many other expensive stuff. All that they use is expensive, from just a spice, herb to animals and delicacy’s.
White truffle is plus minus 2000$ a kg at the moment.
The tuna dish not worth the upgrade? There was big ass quennele of caviar on it, and the tuna, you can be sure it’s no ordinary tuna.
The caviar on the first dish was also generous
Like I said, white truffle is very very expensive, also generous on the plate, but not enough rice 😑
Wagyu, many types of regions and farms, the one is more expensive then the other, depending on quality, plus you have a lot of waste before you can even start portioning the cuts to sell, that’s why wagyu is so expensive in a restaurant.
Foie gras, risotto, wagyu, very fatty and heavy products, with 7+ menu, yes you have to control the portions, or else most won’t make it to the end, most of those restaurants have 10+ menus, some even 20 dish menu
And also, you don’t go to those restaurants to get your belly full.
You have other restaurants for that.
It’s a experience to go to a place like that, from the moment you walk in, being guided to the table, the service, the well thought out menu of the chef, the creativity in the dish, the flavours and you may expect also the perfect combinations, wine as well food.
Food that’s being prepared with a lot of knowledge to get the very best out of it. Every single detail that they can think of is being put in a plate and in the restaurant.
No, it’s not about getting your belly full, no lol
On a personal note, some people should pay attention to how much they eat on a daily basis, many are way passed the amount of food that they need. This plays also a role in why people don’t get this restaurants, different mentality.
I was at Per Se a couple of years ago (sept 2019) and I felt disappointed. 3 stars should be worth the journey, as stated by Michelin, but my experience was not in line with that statement. Service was good but I can't share your opinion. Professional yes but warmth .... Dishes looked promising but i was never overwhelmed by any of them and none of them were surprising.
If i compare it vis a vis the Spanish or Belgian top restaurants then either they need to revisit the star allocation or give the European restaurants even more accolades. For the amount of money paid you should have a special experience and it didn't materialize. It might be 3 stars in the USA but not in Europe. i would advise Thomas Keller to go and visit El Celler Can Roca, Noma, Geranium, de Librije, Hof van Cleve, ... to experience genuine 3 stars. Maybe his other restaurant can live up to the expectation but Per Se definetely not. Thanks for your high quality video's by the way.

I feel exactly the same watching this video, even if my only reference point is Guy Savoy as 3 star experience. In Italy we have 1 star restaurant like Arborina or Lido84 providing outstanding experience for 100-150€ range per person which seem a bargain compared to this

We ate at le Bernadin this past year, and although its a wonderful experience. For normal working class people, forking over a $1000 and up for a meal is almost criminal. Sure a wonderful wine arrangement and unmatched hospitality are amazing to experience as you feel like a millionaire or a celebrity for a night. But if you, just like you guys, are familiar with the world of fine dining, you know that there are restaurants that offer similar experiences for a lot less money. The profit margins on the plates are beyond extreme and although I get that you pay for perfection in ingredients and execution, there is a point of diminishing returns. Plus at any NYC restaurant you pay for the fact that you eat in NYC cause everything in this city seems to be more expensive then the exact same thing somewhere else.
If we ever hit the lottery we'll try all of them. If you make tons of money and you can afford it regularly , good for you. But if you work a 9 to 5 you will need to save up for this and you can do it a couple times in your life time. Makes it special though!!

It definitely feels like NYC comes at a premium. One could hope that the prices are high so that they can pay their staff a living wage and have people work normal hours, but I somehow doubt that's the case...

This is a refreshing review compared to others that seem to glamorize the experience to the point of incredulity, that it may really be an overhyped money grab. I've wondered if there's a little psychology going on that causes a need to believe it's better than it really is just because I'm gonna need to sell a kidney when I'm done to pay for this thing. Lol. I love this review and the occasional hints of sarcasm swirled in.
There might definitely be some psychology at play for some people, wanting to defend the money they already spent. We dine so regularly that we are able to distinguish good from bad, regardless of the price, I think!

My favorite restaurant in New York is Mission Ceviche on 72nd between 2nd and 1st. Go there for lunch and get some ceviches, super light, quick and the BEST place for me. Such a great atmosphere and true Peruvian cuisine. The dishes I'd recommend are: Classic Ceviche, Yellowfin Tartare, Hamachi Tiridto (Must have), The Avechado is good but then you HAVE to get the Scallops in parmesan and the Arscoz Paella dish. Also such great mixed drinks, get the mojito and at the end of the meal ask for a VIP Shot with either the orange and purple liquid ;). By the way, my beef with these michelin restaurants is that at a point, it's really hard to get so much better. Sure, some bites are incredible, but they're just bites. I think it's a fun experience if you have the money, but really, places like Mission Ceviche are just as good for a FRACTION of the price.

I've been to almost all of the Michelin star restaurants in NYC, Per Se was a very wonderful experience, I hope that you went to their kitchen, they have a live stream to the French Laundry in LA.
But for the record, out of the many other Michelin star options, Per Se is low on the list honestly
Yes, it was a nice evening and we did get to see the kitchen (albeit not the live stream). And we agree, the stars don't quite make sense here.

@@andersandkaitlin Honestly each restaurant has the good and the bad, as for EMP, I haven't been there since they have changed their menu, but even before it was a similar experience to Per Se, good food with nice wine pairing, but nothing wow.
regarding Rezdora I would definitely advise you to go there, if you love high quality hand made pasta with depth in the flavor, this is the place, I met with the owners and I can help you get a table of you couldn't find a reservation, the food is a Michelin star quality, for the experience, service and plating they want it to be neighborhood friendly so it's more accessible to people, so it might not be the ideal place for filming for your videos, but it's definitely worth the visit.
And for Daniel the food is cooked with heart, you can feel it and taste it, nothing complicated, just good food, he opened a new restaurant Le Pavillon, I would say don't go there, at least not yet, it's a mess, the food and the menu had no vision, they haven't found their path yet, even the wine pairing was a hit or miss.
And for Aska, I loved the food, but it was the only restaurant that when I was done eating there, I went to another restaurant right after because I was still hungry, but I still liked it

The price on the white truffle upgrade is absurd. A few years ago I had the white truffle tasting at babbo for a similar price as the upgrade alone and that was 4 or 5 dishes of fresh shaved white truffles. Yea I expect a few premiums for being per se but that’s a bit much.

It definitely felt extremely pricy compred to a lot of other dining experiences we've had. Per Se seems to have a certain target audience of super rich diners that will pay anything.

The attractive restaurant and the Michelin meals were excellent. Very expensive in NYC. I remember I ate in Singapore at the Michelin star restaurant in winter 2018. Didn't remember the name of the restaurant and was closed one year later. Small portions and expensive prices. The truffle risotto at this restaurant was outrageous. I ate the truffle risotto in Bellagio, Italy (Lake Como) was much better and cheap. It was around summer 2018 or 2019
Fine dining . looks interesting ,an expensive but it Soo little food , .I do my own cooking since 8 year old ,never had fast food ,I'm 40 an never been in McDonald's nor any pizza store ever.il learn these recipes an fine tune it to my taste 😁😁

We have not been to the vegan EMP, but before that it was better. Per Se might be slightly better than Jean-Georges, but haven't been there in years, so hard to say. Honestly, not sure we can recommend any of them, haha. Updating our New York guide on our blog soon with all our favorites! Just spent three weeks eating all over town.

Seeing the supplementary menu along with what was given in the normal tasting was disappointing to see due to it just being a copy and paste of French Laundry basic tasting menu items, This should’ve been a cutting edge experience but seeing what you were given is upsetting seeing how it’s not innovative or exciting just … safe. We did Chef's Table at Brooklyn Fare on the same trip! They don't allow any videography. The food was at a higher level, but the service was not. Not too impressed with fine dining in New York, to be honest.

Definitely in that space between one and two stars, whereas the food at Per Se was closer to one star. The food at Chef's Table at Brooklyn Fare was closer to two, but not quite there for us either. Some dishes were big misses. Our best meal at a fine dining restaurant in the U.S. so far is Addison in San Diego! Strong two-star. We wanna go to Jont!

We were ok after this meal. Have been more full, but don't know if it's necessarily a goal to feel stuffed. We did feel like the bread serving was rather small, though.
Jules Verne in Eiffel Tower is about as pricey as I've gotten. But this place is nuts in comparison. This may have passed into "Charge a lot just b/c we can" territory. Ironically, the most expensive dish, the truffles, is the only plate where the price can be justified.
I think there's definitely an element of "we charge because there are people with money here," yes.
I've been to a few Michelin star restaurants .....what I can say is have a good lunch beforehand else you will need a pizza after.

Honestly? I don't like the idea of having the "price" of something continuously presented from the Restaurant in this case. For example the risotto (x: this is our risotto. Which is really good, but you want the better version of something we should've already elevated? well, add 100 bucks)
At this point, dishes could be compared to art and it's just wrong to judge something by the price. It should be something clear at the start and thought about only after the meal, not throughout said meal.
We agree. They should just make the best possible menu and offer that. Or have an 8-course and 12-course menu, where the latter has the extra dishes.

WOW! After that miniscule set menu I'll bet you got a couple gyros on the street at $10 each! I didn't see anything so, so special especially the upgraded dish, LOL! Yes, that was a waste of money! Per Se not the only game in town! Your money would be better spent elsewhere.
Depends on what you're in the mood for. I love gyros, burgers, etc....but I also understand tasting menus. Theyare designed to serve you, for m any, once in a lifetime meals on the law if diminishing returns. If you have money, and e joy this type of meal...per se is one of the best dining experiences in the world.
Did this include the wine? I doubt it. Insane cost. These restaurants take the p*ss. Hail the expense account.

Given my experiences worldwide, Per Se is closer to a lower tier 2 star restaurant at best, if it wasn’t Keller, it would have not gotten 3 stars… a shame to be honest. The dishes looked quite standard, at times a it boring. But if you enjoyed it, it’s all that matters.
I would even say closer to a strong 1 star. We enjoyed the service and experience, but the food was only ok.
