    excellent method for more hands free and no need to constantly stir on stovetop. I thought pouring the hot caramel into the kaya will curdle it, but turns out it doesn't, interesting.

      If you pour the hot caramel into the kaya in the beginning of the double boil, it will curdle. If you add at the last 15 minutes, it will be ok.
