Just a tip for infinite water sources in snowy biomes! If you place four stairs in a 2x2 square, so there is a gap in the center where the stairs dip down, and then water-log the stairs, you have a reliable infinite water source that will never freeze since ice can't occupy the same space as the stairs, but water can! On a similar note, you can also place trapdoors at the openings to the water columns going down to the Drowned killing chamber, as water-logged trapdoors also prevent the water from freezing!

I would like to apologise for claiming that they wouldn't despawn in boats.
Turns out wandering traders have a different despawning algorithm to almost any other mob.
Unlike other mobs, they ALWAYS despawn after 48000 ticks (40 minutes) of existing, regardless of being in a vehicle.
You could still put them in unloaded chunks however, and thus they would no longer exist until you loaded them again. This would also free up the wandering trader mob cap

Oak trees has opened up the door to bees. This would work as a decent light source if there were some way to obtain a piece of flint, but it unfortunately doesn't look to be possible within the confines of this challenge. If an oak, birch, cherry sapling on the same y-level grows within 2 blocks of any flower, there's a 1/20 chance of a bee nest spawning attached to the tree.
Either way, from some general testing around with bee aggression it looks as if it's possible to collect honey or wax from the nests safely provided they're harvested at night, and solid blocks are flanking the front, top and bottom of the nest. This should be a safe/reliable way to harvest materials from a bee nest or hive without running the risk of triggering bee aggression and potentially getting stung, effectively killing the bees in the process. No campfire required!

You could still use Redstone Torches as a "light source", they're not the best, but they do stop mob spawning from any amount of light they produce.
So techinically that first Glowstone pillar has the potential of 45 Redstone torches just for decoration. XD

For the wandering trader, two thing need to be done for it not to de-spawn right away.
    1. it needs to be in a boat. a mob will not de-spawn in a boat if in unloaded chunks.
    2. it needs to be in unload chunks. wandering traders have a timer for how long it will stay before de-spawning which is not active when in unloaded chunks.
It still will de-spawn at some point as its timer will start once loaded in again.
