      Yes, you can absolutely double or triple the recipe to bake in bulk. Just make sure to scale all the ingredients proportionally.
      but when it comes to yeast, you don’t need to double or triple the amount exactly. Instead, adding about 50-60% extra yeast is usually sufficient. This is because yeast is very efficient and multiplies during proofing, especially in larger dough batches. Adding too much yeast can cause the dough to rise too quickly, which might affect the texture and flavour.
      Make sure to keep an eye on the dough as it proofs-it should double in size. I hope this helps.

    Can we substitute the bread flour with all purpose flower?

      Substituting all-purpose flour for bread flour in shokupan is possible and will still produce a soft, tasty loaf, but the texture might not have the same perfect balance of fluffiness and chew. If you can find bread flour, it’s worth using for an authentic shokupan experience.
      And,you need to adjust the liquid to account for the difference in protein content and absorption capacity.

      The kneading time can vary depending on your dough mixer’s capacity and power. On average, it takes between 15 to 20 minutes for the dough to reach the perfect elasticity and smoothness.
