    Love this recipe. I doubled the mushrooms, increased the garlic and salt, as you suggested, and used a really big bag of frozen petite peas. It was delicious! Since I live alone, I froze the cooled pasta meal in meal-sized portions. It tasted great reheated, and gave me many tasty meals!

    Hey Jill, I got a hold of some fresh asparagus yesterday and I wanted to make cream asparagus over toast and I couldn't remember how my mother did it. So I used this Alfredo sauce for my asparagus over toast and it was wonderful! Thank you so much for sharing your recipes. Hugs to you and your family and little poncho!

    I used to make my alfredo sauce with all cashews. I had tried several different variations using white beans and such but they didn't satisfy. Then I made your cauliflower cream sauce and now I can make my alfredo with chunks of avocado instead of peas since there is so much less fat than my old way. I do use peas sometimes when I don't have avocado or when we have guests that don't like avocado like our oldest son. The cauliflower sauce is wonderful!

    Hi @JillMcKeever! I agree with you - it did need more salt and garlic. I also added (as a condiment on my own serving bowl) lemon juice - about 1 tsp. It made it taste like it had sour cream! It was SO SO SO GOOD! I made it with the sautéed mushrooms and peas. So good! The noodles and the 1 1/2 dry soy curls made more than I could fit in my largest Pyrex 13x9 baking dish/casserole! So delicious!

    The Vitamix will make the cauliflower sauce AND COOK it from scratch. Just throw everything in the machine and blend on high until you can see the steam rising on the inside. Should take about 5 mins total to fully cook. You might have to add a little water. I used 3/4 c. to get mine to right consistency. DONE.

    Oh my! I am in love with soy curls. I never heard of them until your video. They are awesome. The sauce that you made in this video was awesome. My whole family loved it.     Wow Jill! This looks fantastic! I just LOVE that you take the time to make these videos! I have been so excited to see so many family friendly recipes! Veggie pasta alfredo used to be one of my FAVORITE meals before going plant based, so I will head to market this week to buy the ingredients for this! I can't wait!! I'll let you know how it comes out! I swear, if I could, I'd give 10 thumbs up for most of your videos! Just love your channel, I really do!

    Just made this for dinner and I halved the cauliflower cream sauce (but kept two cloves of garlic). Added some nooch because I bought a little too much from the bulk section. Delicious!!

    Love how real you are. I am new at the plant based diet cooking challenge. My mom died last year of heart disease and my doctor says that I'm heading that way unless I make some changes. So I ordered an Instant Pot, Soy Curls and started learning how to cook using the Pant Based diet. I love how delicious this recipe is and how much it was enjoyed by my family and friends. Thanks for your posting. I did add 2 more garlic cloves and a little more salt. Yummy!

    Thank you so much Simple Daily Recipes I made this without the |Better Than Bouillon No-chicken Base|, because i couldn't get them, i probably would some time soon. Instead i have got like a lot of capers, so threw a couple teaspoons of capers in them, some nutritional yeast and some pickled Jalapenos. It turned out okay. My girlfriend liked it, i loved it.

      Prongs Aedan The better than bouillon is not an essential ingredient to this dish. It's good stuff, I like to use it quite a bit, but if the store ran out forever, I'd be okay without it.

    Looks so yummy! Suggestion: save one pot next time you forget the peas by putting the frozen peas in the colander, then just draining the pasta right over them. The hot water and hot pasta will thaw them instantly.

    I made this recipe today and I love it. Added milk and pepper to the sauce. I had leftover sauce so I froze some. I hope it freeze well.

    @CalinCroga No, it's ready to eat as soon as the pasta is coated in sauce. If you're in the mood, you could easily treat it like a tetrazzini casserole. Top it with bread crumbs and throw it in the oven long enough to toast them lightly golden. Mmmm

    I was surprised you didn't cook the cauliflower in the IP. 3 minutes and it would have been done. This looks wonderful. Can't wait to try it.. Thanks

      tkulma Thanks for that tip! I had thought about cooking the cauliflower in the Instant Pot and now I don't have to look up the cooking time. :)

      tkulma It actually takes longer to cook it in the pressure cooker when you add in the wait time it takes to let the pressure go down. What's that another 10 minutes? Unless you do the quick release method, then well, not longer. Ok. Both ways works. ;D
      OH wait now I remember! I wanted to show off the Sauté feature on the iPot when I cooked the mushrooms.

      +Simple Daily Recipes Your Soy Curl Alfredo was a hit with the family. Can't wait to eat the leftovers today. Yum Yes....they are flattened compared to the traditional taquito but oh so good. I made my last batch with your Soy Curl Taco recipes and a little of your cheese sauce recipe. Oh boy...my husband goes gaga over them! I have a picture of them...maybe I should post on your Facebook page.

    Butler foods needs to give you some money. A 23 year vegetarian we don't usually buy the fake meat subs but these are so good and a fun change of pace. I have been using them for sandwich fillings and in casseroles. The texture is great. They are great to have on hand for those family get-togethers with the skeptical carnivores who cannot face tofu. :)

      +Sarah pauline I totally agree with you about serving them to tofu-weary omnivores. In the beginning of my plant-based transition, I swore I would not get into eating tofu. Today, I could it straight from the container. :D As for the soy curls, I don't think to put them under the fake meat category at all. Because soy curls are not a mishmash of gummy processed ingredients and spices, they are solely soy beans, I consider them a whole plant-food.

    Can't wait to try this this week for me and my girls. Need to order the soy curls today! Is it too stalkerish to say that I wanna move in next door to you just to be your friend and hang out? Your personality and humor are so awesome!!! Love how you keep it real. ❤️. I've watched quite a few of your videos on the Instant Pot over the weekend as I just received it in the mail and I want to ask...why do you cook some recipes using the slow cooker feature and others with the pressure cooker feature? What determines, in your mind, one choice vs the other? Thanks in advance for taking the time to respond.

      Lyndsey Gunal I WOULD LOVE to live in a neighborhood full of my online friends. Imaging the block parties! Heaven on Earth.
      About slow cooking vs pressure cooking, I go back and forth for the sack of attracting both types of cooks to my channel, the pressure cooking fans and the slow cooker fans. How I determine which cooking method I'll use for a recipe honestly depends on how much time I've given myself to prepare the meal.
      I'm not a diligent menu planner in the regards of making out a weekly plan and following that list. The list ends up being this piece of paper hanging on my fridge that screams at me, "You're such a punk, you rebel against yourself. You can't even follow your own plan."
      Anyhoo. I typically wait until around 4 o'clock to start thinking about dinner. On days I know I won't be home and I wish I had a personal chef, I'll use the slow cooker program on the Instant Pot.

    Good morning JIll! When you showed the browning on the bottom of the instapot, *WOOP WOOP*... I immediately thought about the browning I get when I water saute onions.. I let the browning happen on purpose and add a bit of water and it makes the onions go brown, just as if I've carmalized them! And they taste like it as well! I'm wondering if you did that with the mushrooms if they'd suck up that wonderful flavor as well... I know that mushrooms are well known for being sponges soooo.... (just a thought)

    This looks yummy! I do not have soy curls around me, not that I know of. Going to look BUT do you think I can do this sauce in my food processor, I don't have a vitamix. Only a cheapie magic bullet and a food processor.

      Vanessa Anderson The cashews will be soften by the cooking process. I don't know about magic bullets. The food processor will get you the sauce but it mind be a little grainy. The taste should still be delicious.
      OH OH OH! what if you start with the food processor and if it's not smooth enough transfer it to the bullet to finish it off.

    Looks Delic!!! What about adding in raw garlic in after you have cooked the sauce? Crush it with a garlic crusher and it would be more intense of a flavour :o)
    I am deffo going to try this, but am going to try it with vwg as I am not supposed to have soy.

      I really like the taste of freshly crushed garlic in dishes. I prefer it over roasted and cooked.
      Vital wheat Gluten is vwg.

      I think that I like fresh garlic best because it has a stronger flavour, and it doesn't give me tummy trouble like roasted or cooked garlic does.

    Hi! I'm going to make this recipe, but do not have the Better than Bouillon. I'd like to use something else if I can..... Can I use a combo of nooch and a powdered soup base? (I have Vogue Veggie Chicken base which is a vegan powder) Any suggestions? Thanks!

      Use the broth flavors you enjoy already. Then you can adjust the spices, salt and pepper around what you know, and make it delicious.
