When i was a kid, we lived in Canada and had a little river out behind our house. In the river was a little bump of land we called an "island... " taking liberties. When cleaning your catfish, many people claim they taste "muddy." Thats because there is a filter, called a "mud strip," that runs along the top/back of the fish. Remove this strip and you'll never have a "muddy" fish again. :)

Kent Rollins was not lying. That smoked catfish was delicious. I used cherry wood since I couldn't find peach. Everyone loved the tartar sauce. I made mine with extra capers to make your mouth pucker. Keep the great recipes a coming.

Brother Rollins: Down in South Texas (just south of Kingsville) is a seafood restaurant called Kings Inn. Best gulf shrimp and fried drum you’ll ever eat. Their “secret” recipe for their tarter sauce has to be very close to what you made. But I’ve been told there are some crushed Ritz crackers added that gives it some body. But that horseradish (I am sure they chop it up fresh from the root) just makes you do the Kent Rollins shuffle. Google Kings Inn Tarter Sauce recipe.
Keep it light, keep it mellow, is great advice for fish. When I lived in Alaska, Alder was the #1 wood for salmon. I can't wait to try some frozen farm raised catfish fillets in my new electric smoker. I'll be going for a Cajun flavor and will smoke some jalapeno peppers at the same time. Some of the roasted peppers will go on top of the served fillet and then covered with a hollandaise sauce. With a side of asparagus tips and rice, I'll be in heaven.
So glad you used DILL pickles! It's been a long standing feud here over sweet vs dill. I like the addition of horse radish. Always wanted to try adding some Cholula or Tabasco. Now, to go catch me some catfish!

I'm from North Idaho. We have plenty of alder here. We use it to smoke blue backs "kokanee salmon" . I will definitely try this recipe next. Love you videos.

I use the same ingredients plus add: 1 cup mayonnaise 2 teaspoons Dijon or Creole style mustard 1/4 cup parsley leaves 1/4 cup chopped fresh chives Salt and Tabasco sauce to taste I just received your cookbook. I am reading cover to cover. Plus adding sticky notes like you do.
I tried your brine on tilapia filets from COSTCO and it turned out fine as frog-hair smoked and glazed with maple syrup !!! I use a bullet smoker and hickory for smoke and heat ! Thanks for the recipe !!!

Looks great ill have to try. We skinem guttem & seasonem then layem upside down stuffem with yellow orange or red bell peppers onions jalapenos & mushrooms coat foil paper wrap the fish and throw them on a smoker or grill then use corn tortillas for some delicious fish tacos.

I have been camping for a week and I am camping watching this right now and I find this interesting. I saw someone catch two Catfish once and the fish was huge! I was 9 or something when that happened one time a few years ago.
I happen to have two filets in my freezer from our trip not too long ago. I got lucky and had 3.9 pounds of dressed fish to take home. I fried up the little one pounder and all the fingerlings from the big one. I froze the two from the larger fish. Thank you so much for showing this smoked recipe. God Bless

I used to love to go catfish fishing on a still, warm summer evening and just sit with my thoughts...until of course that reel started bending and that drag started to screaming. They put up a great fight and also taste just right. Thanks for the tartar recipe Kent. I've tried many concoctions and have pretty much settled on something pretty similar to yours. When I finally started keeping capers in the fridge and adding them to the mix, that's when my tartar sauce became "just right".
Although I love my fried catfish and hushpuppies, that looked really good. I like that marinade you made. I bet catfish smokes well with the texture of the meat, firm and flaky. Although I don't have as good of catfishing in Colorado as I did in Oklahoma, there are some channel cats in clear, cool waters here that are really tasty. Kent I just watched your video on smoking catfish It was very good. I was raised in FL so I did a lot of fishing and smoked a lot of fish. We never used Alder but we did use lemon, orange, grapefruit, oak and hickory. And I don't know if you have it in Ok but I know it grows in E Texas but we used it a lot for smoking fish,oysters and shrimp and that is pallmetto roots. They smoke like crazy but it is mild tasting. I have also used Palm chunks for smoking seafood. I also love smoked Palm hearts tho in FL we called it cabbage Palm. Larry Meskil from Jackson's Gap, Al

Kent I just watched your video on smoking catfish It was very good. I was raised in FL so I did a lot of fishing and smoked a lot of fish. We never used Alder but we did use lemon, orange, grapefruit, oak and hickory. And I don't know if you have it in Ok but I know it grows in E Texas but we used it a lot for smoking fish,oysters and shrimp and that is pallmetto roots. They smoke like crazy but it is mild tasting. I have also used Palm chunks for smoking seafood. I also love smoked Palm hearts tho in FL we called it cabbage Palm. Larry Meskil from Jackson's Gap, Al
