    My trip to the northeastern Indian states of Assam and Meghalaya in March of 2019 was one I will remember for the rest of my life. This area is as rich in vibrant, mouthwatering flavors as it is in history and culture. Combine that with the friendly locals and beautiful landscapes and you’ve got a pristine paradise fit for any curious traveler! Come along with me as I explore Assam and Meghalaya!
    My third day in Meghalaya closed out with an insanely spicy feast filled with food from the nearby state of Nagaland! I couldn’t wait to try more fiery foods from northeast India!
    Naga food contains lots of bamboo shoots and ghost peppers. Northeast India is extremely diverse when it comes to cuisine. Each state’s food, culture, and people are different from the last.
    Paul took me to a local restaurant called Naga Mandarin for our Naga feast. While climbing the stairs inside the building to get to the restaurant, I ran into an amazing fan! Once inside the restaurant, I met two guys from Nagaland and admired the photos on the wall, which showed tribespeople from the state. There was also a small gift shop of items from Nagaland!
    The menu was made of bamboo. We got the Mini Naga meal, which consisted of pork, rice, dried bamboo shoots, pulled veg, soup, two chutneys, and smoked fish curry.
    I dove into the pork and bamboo shoot curry, which was really potent and hot. The pork was tender and fatty and had a smoky flavor. It was so different from anything I’d ever had. It was so nice with the red rice!
    Then I went with one of the chutneys, which contained tons of seeds from the peppers it was made from. It was made with king peppers and hit really hard, so I tried to cleanse my palate with some mashed potatoes, but they were spicy, too! The potatoes contained chilies, onions, and lots of herbs. With the chutney, the potatoes were amazing!
    Next was the soup with rice. The soup had a very Chinese flavor profile and reminded me of miso soup. It’s made with fermented soybeans.
    Then I tried the fish chutney, which contained lots of chili seeds as well. It had lots of fish flavor but wasn’t too salty like the other fish chutneys I’d tried in northeast India so far. It was hot, though!
    I went with the smoked fish curry next. The fish was really good but contained lots of bones. It had a really nice, smoky flavor. It didn’t blow me away but was good. The curry was more like a thick, peppery soup.
    Next was the smoked beef chutney. It was super colorful and contained lots of chilies. It was really hot! I mixed it with the rice, which helped calm down the heat. I went with a cucumber afterward to cool down some more. While I cooled my mouth down, it was Paul’s turn to try!
    The ghost pepper in the chutney was intense! It was so hot, it had my nose running! Paul handled the dishes with no problem! I went with some mouth fresheners to calm down the heat because I was still dying from the chilies! Our meal came to 590 rupees, or roughly $8.36 U.S.
    The Naga food was really good, especially the beef, but it was a little too hot for me!

      Awesome videos! I would like to mention one thing here, Christianity has nothing to do with the food habits of North East Indians, they have this culture since ages and they converted to Christianity only in the last 10-50 years. Some of them still follow local tribal religions and follow the same food habits.

    The north east people are really friendly and really good hosts. My best friend is from tripura and he had taken me to one of north east friends gatherings. All assembled at a friends house every weekend cooked together and drank and had fun. For the first time i had the spicy beef chutney there and OMG i was blown away, it was delicious af. They have really spicy food. They were amazing hosts. Even though i was not from NE the amount of respect and hospitality they showed me. Amazing people

    Your guide don't look like a Chinese, Meghalaya people look more of a Filipino, Indonesian and Malaysian rather than Chinese.. He also look like the kind of cool guy to hang around with.... Nice video and beautiful guide..

      Assam barely gets as hot as Rajasthan does. Like there are more rainy days then clear days in Summer. There are about 25-35 hot days in Assam in summer days

    If you are planning to visit Nagaland in December then be on first week of December to see the Hornbill Festival of Nagaland for culture shock... And eat all condiments as per your taste buds.. Not as a main dish

    What David and Paul has done cannot be undone. "Lord have mercy on their rectum for they knows not what they are doing". But for the future reference, if anyone wants to try Naga chutney please know that it's an appetizer , just take little bit at the tip of your tongue that will make you feel more hungry and the main dish seem tastier. It should be taken like pickel (achar) of North India.

    There are Hindus in North east. And I am not talking about the Hindus from other parts of india that settle here, but a huge population of Assamese people are Hindu, I am one and even we eat pork and sometimes even though our parents don't eat beef, when young people go to college they try everything, be it beef or whatever.

    You still missed out on "kuwai", the beetel nut along with beetel leaves served on your plate of mouth freshener. That's, what we most Meghalayans like to have after meals, after tea, savoury or anytime ....it keeps you warm and has an acquired taste. Also should have tried some local wine made with "soh-yong", it great.
    And I reckon ghost chilli/Naga chilli is ranked 3rd hottest in the scoville scale after some Mexican followed by a Trinidad chilli.

    Naga food is great and not all items are so chilli hot. You are not supposed to have chutney by the spoonful but mix it with rice and other items instead. Regarding fish bones - it's best to have these with your hands. Great uploads. Thanks.

    I love naga food especially their fermented soy beans. I usually eat pork with rice. The rice makes it less fatty.

    People think we eat Naga Chilly everyday, every meal, every food but I'm sorry that's completely not true. We like it but we hardly eat Naga Chilly. Maybe people outside put Naga Chilly in every dish thinking it would make it more Naga. We make Naga Chilly chutney but not in every meal. Just once in a while.
    We don't eat chutney alone. We eat it with rice. When you were eating chutney without rice....I was like ...oh no that's not a good idea...😂😂 better carry Ice cubes when you poop

      Maybe you don't but most of us do. Everyday either dry or fresh. A naga meal is incomplete without Naga Chili chutney. Idk which breed of naga you belong to.

    Nothing beats pork with bamboo shoot and dry pork with axone.if you wanna go for light meals try 'galho' (green local veg cooked with local rice and local pork innards meat) Finish it off with rice beer.

    It's arguably the best cuisine in northeast India. But I do recommend mixing sidedishes with rice before eating it

    Oh my GOD!!!!!!!!!!!!! You just ate a spoonful of chutney.hahahaha...RESPECT.I am a northeasterner and we dont eat our chutney like that. WOW!!!..haha..You are born traveller. If you can stomach that then nothing will happen to you.
    Edit: I just realised they gave you the "mild" chilly.But still you did an awesome job.Stay in the NE for a few months. Aquire the taste of chilly and once you do that everything else will taste bland.

      Actually ghost pepper is super hot only in your mouth. It does not upset your stomach or make uncomfortable poop. It's way safer for your stomach than the regular chilies that are not so hot to taste but harms your digestive system.

    You got some badass quality here. Even us hardcore local eaters usually don’t put the hot chutney alone right away into mouth but mix with rice etc n eat. I bet you can even try with more hot chutney
