Your descriptions are so vivid that I can almost taste what you are experiencing. That Korean instant ramen is not available locally, so I'll have to rely on what I have on hand. And I think I can make this with the items in my larder! Thanks Emmy, great video.

You could always add some MSG to the home version to give an extra push. That said, I don't think you could compete against Shin Ramen for sheer convenience and consistent flavour that always delivers. You can also 'hack' Shin Ramen in many popular ways to spice up the variety.
Watching make-at-home versions of popular packaged foods (puff pastry is another) always gives me an appreciation of what goes into the market version. Fun and interesting to watch, but I will be buying my shin ramen readymade as usual.
Have MSG in a camp shaker as part of my lunch kit at work, with salt, pepper, tony chachere, sriracha, ketchup, mustard and cholula sauce making up the rest. Call it the 'white powder of happiness', and am confused at times why some think I'm sprinkling cocaine on my meals. In a way, they're not wrong.

I add a boiled egg (or sometimes two!) to mine, with a runny yolk it makes the broth creamy and savoury in a great way. I should definitely add some extra veg to it too though
I'm not 100% but I think you may have used the wrong instant ramen pack? based on the homemade version it seems like the recipe was meant to mimic shin ramyun "black" version, which is the more premium flavored one!

These are my favourite noodles. The heat is just right. I take the noodles out once cooked then add an raw egg to the soup. Once that's almost cooked I pour them over the noodles and add some flaked seaweed. Super yummy.

my husband and i love shin ramen! whenever we want to buy it, he asks if i want the "fancy ramen" :) i'll have to try this out and see if we like it as much!
I keep a shaker jar of porcini or shitake powder in my cabinet, it's great for easily adding a quick umami boost to so many things, especially vegetarian soups & stews.

Pretty much everything homemade is always gonna have that "OH yeah" factor that commercial foods just can't nail down. For me, flavor is everything so I learned well. As for Ramen, I leave it up to the pros because NYC has some great spots. Thanks for sharing your video.

As someone with celiac I've always envied the convenience of ramen was finding a recipe for this. Great recipe you store it in the fridge and heat it up with rice noodles.

Haha! Always thought you were of my cohort but the reference to hypercolor tshirts definitely confirmed it! Let's hope that your hypercolor sunnies don't stop changing color like the tshirts did after a few months and a few washes! Those were some expensive tshirts at $60 a pop in the early 90s. My mum was not very impressed when after a few washes my much begged for tshirt stopped working! 😂

I like to boil my ramen in coconut milk. Then I add the flavor packet and add an egg, green onion, cilantro, green beans what ever I have on hand.

Shin Ramen doesn’t contain msg.
Most KOREAN instant ramen- especially Shin Ramen’s parent company, NONGSHIM, doesn’t use msg in their ramens.
Msg is found in mushrooms, tomatoes, peppers, meat, etc. They may not specifically add MSG by itself, but its in there.
