Today I learned that we Filipinos call as "ampalaya" (or in formal Philippine English, as "bitter gourd") is known as "bitter melon" in Australian English and as "goya" in Japanese. No wonder it was so bitter. XD

It is pretty spicy, but still bearable compared to ghost pepper one. Though I honestly think you could still make them taste really great, just put in some veggies, eggs and cheese, maybe sausages and ham too. They taste heavenly.
It's all about spice tolerance my friend. You want to find your personal sweet spot where you can still taste the food, and the spice really gets you going. Personally, I find that point to make everything taste way more intense. If it's too much for you it's just pain though. Oh, it's those. They're really good, honestly, but the aftertaste is pain, so it's kinda, finish it in one go so you enjoy it and then suffer, otherwise it becomes pain in the middle but you still want to finish. Personally, I reccomend cooking them with something like chicken breast cut into small pieces. Idk what's the deal with people having them with cheese or something though, I remember hearing that was a thing, and all I can say is those people are weird.
Good cheese also adds a soft creamy flavor to the mix, though I also encourage you to try something like cheddar which is a bit stronger in flavor. Goes surprisingly well with spiciness.
