Hi Chef, I am arabic and just wanted to tell you that you can replace the water with plain greek yogurt and it will be much more rich and delicious
Never heard of that, wouldnt the yogurt make it taste different?
Really? I'm an Arab as well (Palestinian) and in my mother has used water. I think she's used yogurt before as well... But usually it's water.
i just asked my mom & she said that even where we are from they use yogurt too. my bad, just because i am used to using water, which shows you that one way is not the only one. also, food is all dependent on taste.
I'm Egyptian and we use water. In fact, he made it exactly like my dad used to make.
I like to use greek yogurt as well as water. Gives it a much better taste.
few tips from the middle east:
add the garlic an salt AFTER the water and lemon. you'll have more control on the tahini's taste.
NEVER use warm water- ice cold water or even ice cubes makes the tahini creamy and white, and cancels some of the bitternes of the tahini.
i also love adding pinch of cumin and a lot of herbs like parsley and mint.
serve it with falafel, shawarma, kabab and shaksshuka and it is f-ing great
thank you!
Todaraba
Thank you
Thank you!
Great, reminds me of my time in Haifa.
This Tahini sauce, I know not well,
I follow Chef John, so what the hell.
Too much garlic, no such thing,
in sauce, or steak, or chicken wing!
Bring the garlic, some cayenne too,
flavors right for me and for you!
Texture so right it holds a line
fresh on your meal or even mine.
Chef John will shine quite like no other,
my culinary friend from another mother!
Why do I love this so much???

Cuz it rhymes you have it your time
Are you a wizard?
here, take all my likes
That wind a like a rap
Tahini paste can also be used in sweet recipes. Try mixing it with some honey and a pinch (very small pinch) of cinnamon. It makes a great spread and/or dip for bread. Where I come from there's a confectionery called halvas, which is made with tahini paste. We usually eat it during fasting periods because it contains no animal products. There's also a sweet pastry called tahinopita, again with tahini paste as a main ingredient.
babablacksheepdog Those sound delicious. Wish I had some right now!
I really like halva!
*****
Yes!
babablacksheepdog halawa in Arabic and no it’s not made like you described but it’s eaten with bread and cheese where I’m from and most middle eastern countries
So if you go sweet with cinnamon and honey, then garlic is a no go, right?
It's refreshing how brutally honest you are. You F'd up your recipe and and you point blank tell us and joke about it. Best channel on youtube.
when he said sumac i looked at the sumac tree i have in my backyard and than he said "not the one in your backyard" and than i shit my pants
You could be a great Voice Over actor for a fun Pixar Movie.
ZZP Zing Pheonix yeah yeah yeah thus right
ZZP Zing Pheonix I was thinking the same thing the other day!
I agree he has a unique voice
Those are very positive observations. I wanted rip my ears off.
Bingo!
Just wanted to say that instead of using lemon juice and olive oil, we use homemade yogurt when we make this at home. It comes out with a good texture and good taste, and yes, we do like a little extra garlic =).
Although, my family does go through the trouble of starting from scratch and roasting the sesame seeds to make the paste. Roasting the sesame seeds definitely changes up the flavor a little, and the yogurt helps balance that.
Mix Honey with Tahini and you'll have a spread that can keep you going for a day. That was practically my lunch for last autumn.
The reference to Whodini was priceless and immediately counted you as a friend :) Thanks for the recipe!
I love Chef John's old school rap/hip hop knowledge! It's always on point, word! 😉 Adore him. ❤️
I have a suggestion as an Egyptian expert in Tahini, adding cumin and chilli flakes to the dressing with the lemon juice and one glove of garlic will give it a great taste. Enjoy! :-)
Shaimaa Elshatter I would never take advice about food from an Egyptian because truth be told that it’s a known fact that the best Arabic food comes from Lebanon Syria and Palestine. You Egyptians are horrible cooks! All your foods are لغويس
@@edbtzkhud :
Lebanon, for the win!
You sir, must be a wizard. Was recently wondering when you were going to do more vegan/vegetarian recipes for us crazy people. Can't wait for the falafel!
decompyler did you eat it? Was it good?
He is the houdini of tahini.
I totally feel your pain, chef John, I'm a garlic lover and many times ruin a recipe because of the garlic overload. So, could the next "mystery" recipe be falafel? I think I may be right! (Nevermind... just saw the end of the video and saw that yes... I was right). =)
I try to neutralize it with some acidity (lemon juice or vinegard) before ... it takes out some of the strenght
Where is the caynne pepper John .???
Main reason why chef john is my nigga! He tells us his mistakes so we cannot make the same mistake.
Most youtube chefs make that recipe perfect everytime... There just too good i guess.....
My nigga chef john!
someoneyouknow12 Lol 😆
As a Middle-eastern I can tell you that you forgot to put one of the most important ingredients: cumin and black pepper.
Also you add a bet of white vinegar to thicken it up a bit before pouring in water.
The best tahini:
a cup of tahini
juice from half a lemon
garlic (not too much)
cumin
salt
pepper
parsley
hot paprika
1/3 cup of humus paste
mix with a hand blender to make it smooth and fluffy.
Then add COLD water slowly and mix until wanted consistency.
Thanks, Chef John! This recipe turned out GREAT!! I only had a fresh lime on hand, so I used that and it still turned out AMAZING! I was conservative with the garlic as you suggested, but ended up adding a little more garlic anyway. We put this on falafels and it was YUM!!! Thank you for the awesome recipe!
I use a zester for the garlic then add to the fresh squeezed lemon juice, cover refrigerat for up to 2hrs the use a fine mesh strainer to add to the tahini, not only does the lemon juice tame the garlic but not having chunks of garlic in the hummus or tahini makes it smoother
Most honest chef ever :), if Bobby Flay ever makes mistake probably he just mad at his assistant and cover up operation commenced.
As an Israeli Im bound to love Tahini and Falafel (looking forward to the vid), I also make Tahini on a weekly basis and I recommend adding a bit of Cumin and black pepper. (also chopped parsley if you like it.)
love your videos!
LOL....the sugar free, peanut butter story is PRICELESS! I purchased some thinking..how healthy it would be. AND your reaction is the BEST!
Very nice and I just LOVE sauces and seasoning mixes. They make dishes come together sooo quickly and flavorful, in a very short time, which is important for a parent like me.
Nice video. A comment and a couple of suggestions: 1. You should use ice-cold water and not warm water. It makes the tahini come out much paler, almost white. I don't think it alters taste or texture, but it's pretty and customary around here.
2. You should try adding a pinch of cumin to your tahini. It's great.
3. A very popular and extremely delicious variety is Lebanese green tahini - after making the tahini sauce, stir in (or blend in) A LOT of finely chopped parsley. The oils from the parsley color the whole thing a lovely shade of green and the taste is a lot fresher, works amazing on salads (though not as popular on fried stuff like falalfel).
Thanks!
“You bit into your peanut butter toast and was like, what the hell is this?” 🤣
just want to give a quick language info:
in the correct Arabic it's pronounced (Tahinah) طحينه with a short a, and a light h. but some dialects in the northern region of middle east ( Lebanon, Syria .. etc) they pronounce it Tahini, with a short i, i mean the last i only.
ant's a derived word from (Tahn) طحن means grounding, it''s basically sesame seeds grounded or smashed. so it's named after the process.
thank you ^^
Nice
I am so wet for you
Thank you. It's always good to learn new things, even at 76.
Shukran.
Actually, in the province in Iran that my family lived, we have sesame seed paste all the time!! It's an acquired taste for sure, but we have it most often with dates and it's one of the favourite snacks there!
one of the best cooking channels on youtube unpretentious and easy to follow great work
We , Arabs , add yogurt instead of water , which gives it a rich and amazing taste and balance the garlic and Tahina .
I'm in love with your channel though .. a veryyyy old fan !
This is why I like your channel so much. You could have just started over and we would never know. Even Chefs can make mistakes while cooking. I like garlic. Just not that much raw garlic. LOL
No cayenne pepper? Who are you and what have you done with Chef John?
In my opinion u must replace the water with yogurt like 3/2 tablespoon of yogurt if you dont have it use sour cream
And eat tahinie with kebab
Some times i eat it with plain burger
Thanks for the video
I believe in the next video we will see some crispy Falafels!
Ah damn! I wrote that comment half-way through the video before I had seen the end :/ I am proud of mysef, yet disappointed at the same time.
bovko did the same thing
I think a garlic/yoghurt sauce goes far better with falafel tbh.
Will be koftas not falafel
Adrian H. of course not it's always gonna be tahina sauce because it's both Arabian dish and that's how we eat it and that's how we like it !! ... I mean seriously yogurt with felafels ? thats disgusting obviously u were eating super fucked up felafels !
you know that sesame ground seed. if you mix it with some date jam it will taste soo good.
This guy sounds SO excited about food and I love it! He should do voiceovers for cartoons or narrations like this one!
Definitely making this! Got lotsa sesame seeds and olive oil, so tahini is really easy to bash up. Other then that, lemons garlic and water are staples!
This is an interesting mixture using tahini. My father is from the Middle East and I always watched him mix fresh plain yogurt with tahini (not a lot of tahini actually, it's runny but very dense in taste). It is so simple but an amazinggggg topping for wraps, döners (or gyros), falafel, kibbeh, or even shish kebabs.
Brazilian/Syrian
Haha thanks :)
You're so very wonderful, not blowing smoke either. I appreciate your videos and can imagine breaking bread at an area diner type thingy. I hope you're safe and well, cheers 😊
Jordanian tip : Just do this directly mixing the tahini, some oil and the rest of the ingredients with hummus in a dish. Now you have super nice hummus ready :). No need to freeze it or anything.
To make tahini sauce first ingredient you need is tahini sauce. Wow 👏🏽
In Egypt Garlic is only used when tahina is served with Fish...also instead of water try throwing in a big spoon of yogurt, if its too think ad a few drops of water...and if you make the paste yourself at home add some raw peanuts in there.
Also there are many varieties of sweet tahina...the most popular and easiest is adding it to molasses (and maybe throw in some grounded peanuts or Pistachio) and eat it with pita bread...Perfection!
It's a good thing I rewatched this video before making my tahini. I'm a huge fan of garlic so I needed that reminder!
Best sauce ever!! I ate it with self-made baked potatoe chips! Very delicious!
I've made CJ's wonderful falafel recipe _so_ often with this sauce. His could be rescued, adding more tahini, etc. to dilute the excess garlic back to standard strength, what's left being frozen. As falafels and this sauce are vegan, vegetarian, gluten-free, crispy and delicious, you get a dish that appeals to virtually everyone. As drinks parties 'nibbles', _zoomph_ and they're gone!
Ah man I did not think I would be seeing more censored balls today.
John, I have perfectly edible non-poisonous sumac all over my farm. You just have to google it and look closely at the images and learn the difference between edible and non-edible plants. I have loads of staghorn sumac. You are unlikely to encounter poison sumac unless you're in a bog or wetlands. The berries are green or white and hang down like grapes.
Harmless edible sumacs generally grow on dry areas, fields, fencerows, roadsides. I don't pick from roadsides due to contamination from car exhaust. The edible berries are vivid red, and almost always in upright, pointed, horn or cone shaped clusters.
2:09 "You are the Whodini of your Tahini. And I don't mean the magician. I mean the group from Brooklyn that wrote "Freaks Come Out At Night". Your Whodini reference earns you a new subscriber. Well played, sir.
Hey this the Burger Dude I recognize that voice....lol
Great great recipe I m into whole food plant based diet i got scared of tahini because it soo caloric but with this recipe I could drive down the caloric density by using water just like mayo vinaigraite
"The Ketchup of Middle East" lol
EXCELLENT TUTORIAL... COMES OUT PERFECTLY! Thank you so much!! Such a simple thing but following others never came out right...
I LOVE this variation. I added garlic in mine, tahini is amazing!
Thank you Chef John for the Tahini Sauce with your twist ! We would add chopped parsley with Aleppo Red Pepper (Armenian style) and cumin powder. This is the basic Lebanese way . It's yummy with falafel, shawerma etc Enjoy !
Tahini costs a FORTUNE here in Manila so after almost six years of preparing dips without that ingredient, I'm finally preparing my own (I just bought a kilogramme of sesame seeds today, in fact).
I can listen to you all day
I must buy some tahini so I can have falafal. Chickpeas are at the ready . . . can’t wait. Thank you chef John.
Ahh so thats why my Tahini was like peanut butter. Even though this video is 6 years old it's still extremely helpful now. Thank you
Every time I look up a recipe, you seem to be the one I pick. I wish I could have been trained under you, but that's OK I have you on RUclips. Problem solved. :)
I lurvv tahini on falafel, but I'm obsessed about garlic sauce on chicken shawarma. Just a little teaser about what I'm hoping to see. Love your work.
I loved this!!!!! My red meat and potatos husband enjoyed this as well.
It's been a long time since I've had peanut butter with sugar in it.
im from middle east and I always eat tahini sauce and falafels… but I never did them at home before but its really easy so I'm gonna do this sauce ;)
I like the way you drizzle things in, chef.
Hey John, a little tip for ya: Lemon juice is nice and all, but for the best Tahini sauce you use water and citric acid. I mean that white crystal powder stuff, pure and dry citric acid. Adding that (incrementally, of course) dramatically improves the flavor by avoiding any of the bitterness from the lemon, since the Tahini paste is already plenty bitter on its own.
You should at least try it out once :)
I subscribed because of your voice and humor
Oh my god, I am looking so much forward to the falafel video. *Definitely* making those and this as soon as possible!
Yayyyyyyy falafel! They're little balls of joy :)
I have never try tahini sauce. Im thrilled to try this one :)
FALAFEL!!!!!!!!! Thank you! I can't wait!
I could put tahini on everything. Sometimes, I make it into a salad dressing which is just awesome. This version is quite different from my family's version but I'm sure its just as good.
Oh man, that's some next level telepathy. Just the other day a coworker mentioned she was craving for something doughy and fried (such as we call salgadinhos in Brazil), and I immediately thought of falafel and started craving it myself. I could see right through the blurred shot, haha
Midle-east ketchup is good I like it and now I know how to make it. Usually I buy it when I see it but not anymore. Thanks for upload. ✌️
where i live peanut butter is not sweetened, it only has peanuts and a little salt. i love it, as well as tahin containing nothing but sesame seeds and a little salt.
i tried salt-free versions as well (for health reasons) - those are a bit too plain. now i try them with half the salt (mix the two kinds or add a little salt to the salt-free type).
tahin and peanut butter as a bread topping combine very well with both sweet extra's (cinnamon, honey, chocolate, jam) and savoury extra's (hummus, cucumber, tomato, bacon, bell pepper, cheese, chicken or turkey, lettuce).
YUMMY, I USE IT FOR spring rolls its delicious, last time I tried making it i forgot the water, could not get it to the rt texture, nearly drove myself out of my mind adding olive oil and lemon to no avail...ty chef, sumac sounds divine and the parsley
Addendum: we do not add olive oil since Tahini is prepared with ground sesame seeds preserved in olive oil. Also we smash the garlic with a bit of salt with a mortar and a pistle. The strength of the garlic flavor is of a personal choice but if you smash a medium clove with salt that ample for 1/4 tahini sauce with the lemon and water.
You are the Mike Sweeney of your tahini, after all!
Another variation is the addition of apple cider vinegar, white / black pepper and a tiny drop of sesame oil if you wanna bring out the taste of sesame some more, or walnut oil instead of olive if you wanna use it for salads or cold dishes.
Also, ketchup of the Arab world sounds about right.
I've been taught to make it with cold water, the colder the better. I actually make it in closed container with a cube of ice, which I can then shake until it comes together.
hayam fatima I honestly can't say. Now I'm curious, maybe I'll find a food scientist to ask.
Haha! Why am I not surprised that Chef John has knowledge of old school hip hop? You are a wonderful, eclectic man, Chef John!
Yes! I'm so excited for your falafel, Chef. BTW, I've made tahini dressing before but I actually made the tahini itself from scratch. It's not that hard, you just toast sesame seeds and blend it together with sesame oil. I did not make the sesame oil from scratch ;-)
Damnit. I really wanted a shot of the inside of the falafel after he took a bite.
You're such a tease chef John...
I'm a big garlic fan, so that sauce is right up my alley.
Tip: what’s missing is a bit of cumin and a splash of white vinegar. I love all your videos, Chef John
I never taste my food and it's always soooooooooo good. I can tell by the smell if it has enough salt. It's my mutant power.
Hi, Chef John! I’m new to your channel and am one of those disturbed voyeurs 🤣 (watched easily over a hundred of your videos in the last few days) yesterday I was thinking about sumac and was rewarded with this use of the powder today , thank you for all of your entertaining, punny , and informative work !
I made this for Falafel sandwiches.. Delicious. I definitely recommend this recipe.Thank you for posting it.
came here for a tahini sauce recipe, didn't expect to laugh so much from the commentary haha great job and great recipe too
"The Ketchup of the Middle East" Couldn't have described it better myself. Well done chef.
Minus the olive oil and half of the garlic, add some pepper and this is one of my favourite salad dressings to make at home! :)
"... You are Hoodini of your tahini ..." ohh I love Chef John !
Chef John that is a great tahini sauce, I am Syrian and I like to add a little bit of greek yogurt to it. Try it, I promise it's great!
You are so funny, really enjoy your videos! Just saw this recipe today, I recently bought sumac so can't wait to use it for this!
Lol I remember that damn peanut butter!
Falafel dipped in sauce... Too good...
im so pumped for the falafel video
Black pepper, some lemon or lime zest, a drop of Worcestershire, a bit of cayenne. Sometimes a bit of thick (Greek) yoghurt is nice, too.
"And you took a bite of your peanut butter toast and said what the hell is that?"
Made my day
Still waiting for the Persian dessert chef, you can't just skip it
I just subscribed. I love your recipes and the way you present them. I can't wait to try this tahini and then I'm going to make your falafel patties. I'm so excited--I've never made this before! Thank you, John!!
