I haven’t every had one fall off, I have a few hats I made for my son over a year ago still in great shape! It is the method I use when selling hats! I prefer Richardson, 112 hats!
You know they make glue specifically for this. And they will never fall off. Washing machine safe. Why would you use wood glue when you can get the proper adhesive cheap and delivered in two days.

I'm surprised about the wood glue, have you had any issues if they get rained on, any complaints from customers
Would this work the same with an embroidered patch? Also you think flex seal would do the same?

Where did you get your patch?
I make them myself :)
Please don’t use wood glue. Those patches will fail since wood glue will not have any longer term adhesion due to its makeup.
