    Millets are ancient grains which are perfect alternative grains for those who need a gluten-free, high fibre and healthier option to wheat and rice as its flour can be made into roti, paratha and more and its grain can be cooked like rice, as well as, made into idli, dosa, uttapam, samosa, cookies etc.
    Millets are a very nutritious, alkaline food and much easier to digest than other grains.
    Here is the correct way to make millet flour from millets at home. Proper soaking is very essential to not only derive the full nutritional benefits of millets as they become more digestible but also to avoid any digestive issues like gas, bloating and indigestion which some people seem to have when they consume millets which have not been soaked for sufficient time.

    Millets are ancient grains which were consumed for thousands of years before wheat and rice became popular about 70-80 years ago. Jowar, bajra, ragi are some examples of millets.
    I have also uploaded a video explaining millets as well the Sridhanya millets, 5 millets - foxtail, little, barnyard, kodo and browntop millet, which have been found to cure most diseases when consumed instead of wheat and rice. Please check it out.

    To dry the soaked millets in the oven, madam, at what temperature should they be set so that the millets do not burn? Because right now the sun is not even coming out in the rain.

    • @RajanSinghJolly
      @RajanSinghJolly  3 года назад +1

      We have never dried millets in an OTG oven so I cannot tell you an exact temperature. You need to go to the lowest setting and keep a regular watch on them while turning them over frequently so that only the extra water they have absorbed dries out.
      I can just say that a temperature of around 100 deg F should be fine but keep a regular check on it.

    Have you tried soaking them using the nixtamalization process? I've read some research papers that the same method used on maize could be utilize on other whole unpolished grain. The chemical process allows it to unlocks more nutrition, make it more sticky like wheat flour to make bread and the alkaline level of the solution destroys pest, harmful pathogens and deadly poison residue caused by mold when being kept for long term in the silo.

      keep it in the warmest place in the house. I can understand your problem as I too was in Canada for 8 years and it can be really tricky to dry something in that weather. you can keep it on your counter top or dining table overnight for a few days. spread the grains more widely to allow better drying. once the grains feel dry to your hand then roast it on a very low flame for about 5 to 10 mins just to make sure all the moisture is gone. let it cool completely before grinding it to a powder.

      @@mistym7632 i can understand. in that case. drain the water very well and then take a large cotton cloth like a clean bedsheet. fold it over twice and then spread the grains on it. keep this in the warmest place in your house or keep it on the countertop or dining table or any wide flat surface. it will take 12 to 15 hours to dry. once you feel its dry, dry roast it on a very low flame for about 5 to 10 mins to ensure all the moisture is gone. then grind and store it in a dry glass jar. use only dry spoon to get the flour from the jar. If you follow these tips you will not get any molds in the flour.

      Yes same method for all millet flours. You have to soak because millets contain lot of fiber, especially sridhanya millets.

    Nice video. Why are you soaking it for 7-8 hrs, not clear? We can wash it and immediately keep for drying.

    • @RajanSinghJolly
      @RajanSinghJolly  3 года назад

      Since Siridhanya millets are very high in fibre they need to be soaked for atleast 7-8 hours. This will make their nutrients easily available and prevent any digestion issues like indigestion, gas etc.

    Can we eat millets in summer also

    • @RajanSinghJolly
      @RajanSinghJolly  Год назад

      Yes you can start with one meal a day and slowly increase to 3 meals. Drink more water when consuming millets as they have lot of fibre and are dry in nature. For this reason always add ghee to rotis or millet rice before eating.
      If however as it happens with any other food if a particular millet does not agree with your system stop it.
      If you have any health issues and are taking any medicine consult your doctor before taking millets.

    Till how month millet can be stored?

    • @RajanSinghJolly
      @RajanSinghJolly  Год назад +1

      The till date is given on the packet. It's usually 6 months from date of packing. If you store in the fridge it can keep good upto a year.
      Millets can go rancid soon in hot weather as they have lot of oil in them.
