    it is a pleasant surprise that you made ambli in steel pot.I am tired of people showing ambli making in fancy clay pots.wanted to make ambli but knowing clay or mud pots are full of chemicals,even from potters simple clay pots are contaminated as natural mud is now contaminated with pesticides and chemicals.now I can make ambli in steel pots too.

      1.Roasting the Millet
      Purpose:Roasting enhances the nutty flavor of the millet and reduces its raw taste. It also makes the grain easier to grind by reducing its moisture content and increases its shelf life by reducing the risk of rancidity from the natural oils in millet.
      Benefit: Roasting helps improve the final taste of ambli, giving it a toasty, rich aroma.
      2.Grinding the Roasted Millet**
      Purpose:Grinding the millet into a coarse or fine powder (depending on the recipe) increases its surface area, allowing it to cook evenly and quickly. It also improves the texture of the ambli, making it smooth and lump-free.
      Benefit:Proper grinding ensures the ambli has a pleasant, drinkable consistency.
      3.Cooking in the Same Water Used for Soaking
      -Purpose:Soaking millet softens it and initiates a slight fermentation process, which helps improve its digestibility and bioavailability of nutrients like iron and calcium. Cooking in the same water preserves the nutrients that may have leached into the water during soaking.
      Benefit: This method minimizes nutrient loss and contributes to the authentic flavor profile of the ambli.

      Finger Millet (Ragi): It has a reddish-brown color and is often sold in its grain or flour form. Look for a fine, consistent texture in the flour and avoid any with clumps or a stale smell.
      Pearl Millet (Bajra): This millet has a grayish color with a greenish tint. Pearl millet flour has a slightly coarse texture. Whole grains should feel firm and have a faint sheen.
      Foxtail Millet: The grains are small and yellow, with a slightly rounded shape. High-quality foxtail millet grains are uniform in color and free from dust or broken pieces.
      Kodo Millet: This millet looks similar to foxtail millet but is darker, with a brownish-gray color. Its taste is slightly earthy.
      Little Millet: Little millet grains are very small and pale yellow or off-white. Avoid packages with lots of broken grains or powder at the bottom.
      Barnyard Millet: Light in color and round, barnyard millet should feel clean and be free from excess debris.
      Proso Millet (Chena): This is usually pale in color and has a round shape. Proso millet should not be too powdery or have a musty odor.

      1. Color aur Smell Check:
      Shuddh mitti ke bartan ka rang natural, matte aur earthy hota hai, jo zyada chamakdaar nahi hota. Agar pot mein chamak ya artificially bright colors hain, toh ye chemicals ka indicator ho sakta hai.
      Ek aur method ye hai ki bartan ko suunghein. Agar mitti ka natural, earthy smell hai toh woh chemical-free hone ka sanket hai. Agar bartan se ajeeb ya strong chemical ki smell aaye, toh wo shayad chemical-laden ho sakta hai.
      2. Unpolished Surface:
      Bahut se mitti ke bartan natural aur unpolished hote hain. Agar surface bilkul smooth aur polished lag raha hai toh isme lead glaze ya anya chemicals ka use hua ho sakta hai.
      3. Water Absorption Test:
      Mitti ke bartan ko paani me kuch der ke liye bhigo dein (15-20 minute). Shuddh mitti ke bartan mein paani absorb ho jaata hai aur bartan thoda bhari ho jaata hai. Agar bartan water-repellent lag raha hai, toh ho sakta hai usme coating ya chemicals lage ho.
      4. Reputed Brands Aur Certifications:
      Certified aur reputed brands se mitti ke bartan lene se chemical-free bartan milne ke chances badh jaate hain. Kuch organic ya eco-friendly certifications bhi hoti hain jo safe products ke liye indicate karti hain.

    You are doing it in wrong way, Mud pot is must.

      which is traditionally cooked in a mud pot for its authentic flavor and texture. If a mud pot isn't available, or if you're considering a chemically treated pot, it doesn't mean you have to stop cooking ambli.
      You can use other types of cookware, like stainless steel or chemical-free clay pots, if a mud pot isn’t accessible.

      @@nationfood please do not take it in the wrong way, mud pot has small holes which will help to develope microbes in the ambali, these microbes develope gut bacteria which will improve our digestion and immunity. Please refer Dr. Khadar Vali videos FYI.
