I did it and this is easiest and best recipe so far. Any pre-roasting of almonds alone will burn them, also soaking them beforehand makes them too soggy inside. Also, adding more almonds and increasing the amount of other ingredients overcrowd the pan. This is the exact recipe for best candied almonds, thank you!

Hello I just noticed that at the end, the sugar is almost powdery then suddenly became wet. I did what you instructed but the appearanceof what I did ia very powdery not wet like your final product.

    • @MaryamBlair1

Blue Ortega when sugar turns powdery keep stirring until it melts again and sticks to your almonds or peanuts! When it becomes runny it means it’s done. I hope this helps. Thank you.

Thank you for sharing the recipe. Your technique is so simple and good. But I wanted some flavors so I used coconut sugar and added cinamon, cacao powder, vanilla and a pinch of salt and it turned out just like the one that sells at the state fair. So..so good! And very crunchy ( which is very hard to achieve with raw almonds) I can't stop eating them. Thanks again for such a simple way to do it.

Thank you so much for sharing this recipe, so easy, and so simple. I successfully made it right after watching your video. I added some raw pumpkin seeds during the middle and handful of sesame at final. It’s really great. Anyone who want to add pumpkin seeds remember doing it later since it’s small seeds, might get over cooked. And it’s so easy to clean the pan too after immediately soaped in water.:) Thank you again !

I didn’t add anything or skip a step. When you first add the sugar it will look “wet” and then as you keep stirring it will turn powdery dry, just keep stirring and then it will caramelize.

This reminds me of Christmas In NewYork. When the street vendor roast nuts. You can smell it in the air.
You said brown sugar but it looks like raw sugar none bleach. I don’t know if you are in the United State. We have something called brown sugar that has molasses in it, to make it brown as well. The only reason why I am asking, I’ve been out of the country before. Other people call Raw sugar brown sugar because it’s a a very light brown color. Please help me if you can.

Yes you can use either! I personally use any sweetener I have in my pantry but never tried jaggery although I think it’s an awesome idea! Thank you for your comment.
