    Excellent 🎉 keeping consistency in mixology can be tricky sometimes and this helps alot to replicate the same flavor profile of the cocktail everytime.

    Great info, thanks. Always looking for a better cinnamon syrup. I notice all the essential oils say "for external use only"? Also some say "made from cinnamon leaf", is that the same? Another solution for your coloring problem would be to use demerara sugar, that makes a rich brown syrup

      Almost all bottles say that because drinking pure cinnamon oil isn't good, but in this diluted form, it is fine. If it is 100% natural then it is fine. Cinnamon leaf oil can be used but is of a lesser quality than the bark oils. And I've seen demerara used, it definitely gets the right colour but it does have a molasses-like flavour that I can taste when I've used it for other syrups.

    Hi Marcy, thanks for the video. I am a bit confused about Essence and Extract. So if I get you right, the 8ml Oil and 250ml Alc gives and Extract. In another video you say 15ml Oil and 225ml Alc gives an Essence. Does that mean that an Essence is double as much concentrated that an Extract, and I guess one could make an essence and just use half of it in the sirup, right ?

    I watched your video and liked it, but was wonder what type cinnamon essential oil you use. I looked the oil up and found that there are several different kinds like leaf and bark and other for Diffuser .

    Hello Darcy! I really have enjoyed your videos. I have a question. I assume like the cinnamon extract you made, can you use other essential oils to make other extracts utilizing the exact same ratio to alcohol, then adjust to amount of extract in making syrups?

      Darcy, disregard my question above. I did forget that you were working on providing easy access to more information and your introduction of the "Flavour Zone" the same day as my question made me chuckle at myself. Now I can more comfortably utilize reference info on using "gras" essential oils safely along with other great info for a hobby that has interested me for some time.

      It is shelf stable, anything less than 1:1 is not.

    Can the cinnamon oil be used directly into the syrup, or does it have to have the alcohol in order to emulsify? Would this change any if we're hot filling?

      No, cinnamon oil doesn't dissolve in water or syrup. It's the old saying, "Oil and water do not mix," so you need the alcohol to help disperse the oil evenly in the syrup. The alcohol doesn't act as a solvent in the syrup, if spreads the oil into tiny drops throughout the syrup. Eventually, the oil will float to the top, but hopefully, you've used all of it up by then.

    Just found your channel the other day and plan on checking out the patreon. I’m curious as to how long this syrup would keep shelf stable? Also I’ve seen ones where you mix citric acid and sodium bicarbonate, which would make them last longer but by how much?

      Some syrups last a long time, my cinnamon syrup has been fine for 18 months (but cinnamon oils have preservative quality and I adjust my syrups to a pH below 4 using citric acid, no sodium bicarbonate (sodium citrate) which helps). Other syrups may not last as long, it depends on the types of oil in the essence.

      Yes and that is going to be a future video. There are few tricks with it but it can work well.

      Just buy cinnamon essential oil. You will need distill it otherwise.

      It should work fine, you may just need to adjust the amount of mint oil, as it can be quite strong.

    Does using non-caloric sweeteners reduce the emulsion stability of syrups?

      Yes it does. Because such small amounts are used they don't provide any "solvent" benefit. Sugar does.

    Do you have a recipe for the Cinnamon oil? Or do you buy that ?

      You need to buy the cinnamon oil, just make sure you get 100% steam-distilled oil and not an extract. A small 1 oz bottle will make 20L or 5 gallons of syrup.

      @@nicholascampanella5329 yes and I plan on doing a series of videos showing how to work with different flavour oils. Different oils require different strengths and some oils have more insoluble matter that needs to be separated. For example, lemon oil has lots of terpenes, which are flavour compounds, but they won't dissolve in simple syrup so there is a simple method to make an extract and separate them with alcohol. I'll be doing this one in a few weeks hopefully.

      @@Artofdrink All I'm finding on Amazon are "therapeutic grade" that says external use only. Where do I find food grade?

      @@radiogorillaz therapeutic grade is just a made-up classification by essential oil companies for marketing purposes, the FDA does not recognize it, so just look for 100% pure cinnamon oil, a google search pulls up many providers.

      Try using propylene glycol instead of alcohol. it may be a bit hazy but the taste should be similar.
