Hello friends! Today we are making a super special cake to me. As some of you already know, I’m a coffee lover, that’s why I couldn’t resist making this dessert. Each layer is loaded with coffee flavor, rich sweet syrup and light coffee cream. A perfect indulgent dessert for your afternoon tea.

INGREDIENTS:
Mocha Sponge Cake:
-55g milk
-8 g instant coffee
-6 eggs (room temp.)
-150g sugar
-140g cake flour
-45g vegetable oil
Mocha Paste:
-½ cup heavy cream
-1 ½ tbsp cocoa powder
-1 tsp instant coffee
-2 small pieces mocha chocolate
Syrup:
-¼ cup warm water
-1 tbsp honey
-1 tsp instant coffee or espresso
For the Cream:
-1 ¾ cup heavy cream (cold)
-100g sugar
Additional:
-baking pan 9 X 3
-coffee beans
-fresh mint
-piping tip #3
