I am so thrilled to begin to share my Christmas baking with you! I love Christmas time. I especially love how magical our home feels after all of the decorations are up and we are snuggling under the lights of our Christmas tree. Today, I will be sharing my first fun holiday dessert - Rich Cinnamon Pumpkin Cheesecake with Ginger Crust! I love the flavor of Christmas, and baking is one of our favorite things to do, during the Holidays. This cheesecake will make your Holidays magical. The sweetness of caramel, silky, smooth pumpkin cheesecake and homemade ginger crust, gives a heavenly combination of flavors and textures. Whether for a party or for your upcoming Holidays, I can’t wait for you to try it!

INGREDIENTS:
Ginger Crust:
130g all-purpose flour
50g tbsp sugar
1/2 tsp baking powder
1 tsp ground cinnamon
1 tsp freshly ground ginger
80g cold grated butter
1 egg (large)
Pumpkin Cheesecake:
1000g cream cheese (room temperature)
1 ½ cup butternut puree (drain)
6 eggs
1 cup (can) sweetened condensed milk
1/2 heavy cream
1/2 tsp cinnamon
1 tsp vanilla extract
60g potato starch
Additional:
Round spring form pan 10 X 2 ½
