    In Pakistan my grandmother used to make what is called Gulkand from the rose petals of her garden. The rose petals would be mixed with just sugar and tightly packed in glass jars and put on her roof in full sun. Occasionally she would turn the jars and open them to mix the concoction. It would gradually compact and recede further down in the jars. After some weeks it would turn into a dark, sticky, rose smelling toffee like substance that she would take out with a tiny spoon and feed to us when we came for visits. It was something we would only get at my grandparents house. I guess it is like an uncooked jam, but denser.

    My brother-in-law, sister-in-law,husband and I visited Istanbul several years ago and I fell in love with it. Wished I had more time. Your people are so wonderful and friendly and the architecture of the houses and mosques are stunning. I hope to visit again. Hoping for peace for your country.

    This was fascinating! I can't do this in my apartment, lacking space and also no longer having culinary roses, like I used to have when I had a house and garden, so thank God I can buy distilled rose water at the Middle Eastern grocery! It was engrossing to watch how this process works, however, so thanks for posting : )

    One of Bulgarian traditional features is Bulgarian rose. So we have deep roots in production of rose oil.

    Salam alikum miss Rafiqa! I love to watch your show or videos. If I am not doing mistakes. I do think I see your show back in 2009 or before that or me be after that in my satellite dish they call in America I don’t no what you guys call? I was always watching Turkish channel most was food channel one of them was your show that you were going village to village showing the Kurdish people live style. Or me be I am wrong. But back then everyone has a vcR you record the Channel you liked. From the tv . I have a lot of these cassettes with me . And there was another guy from Turkeys. He had a Chanel by name (musafer) I forgot his name that was my two best program in your tv that I always following them. Most people was waiting turkeys drama . But I loved to watch cooking channel all the time. And you just showing the Rose water . You Reminded me in back home. My mom always was doing these kind of stuff. I loved it and I miss it. If you are in your country you know how it’s? But when you are away from your country so many years. Then it’s reminding you any kind of your videos. Thanks again .     I haven't seen other people with stills in a long time! Refika, this is a rare art. I know Turkey is very famous for its rose hydrosol and oils though. I haven't even seen one of these stills since my mom's farm!

    In the state of Oregon (USA), Portland is known for its roses. One of our cities nickname is The City of Roses. We also have the oldest international rose test gardens. We have people visit from all over the world to see these gardens.

    Here is the my mother recepie for home made.
    put in glass jar , 1/2 table spoon citcic acid with rose flower and water.
    Keep it at sunny part of your house for 7 - 10 days. (Don't forget shake it every day).
    When the water color will be change, it means done. Mix that water with sugar. You can drink like lemonade. Enjoy it

    It’s great how you introduce the story behind rose water. In Iran, we call rose water “🌹Golab” which is our famous product belong Kashan province. You have to try our rose water is unique and remarkable. If I come to Istanbul I love to bring our Golab as a souvenir for dear Refika. 💗

    At this time of the year I make Rose Petal Sorbet from my own highly scented rose called 'Etoile de Hollande. The most used variety for distilling rose oil/rose water is the damask rose (rosa damascena). My rose is a modern hybrid, but the scent (taste!) is divine!

    In Indian culture we use rose water in face pack or in sweet dishes. Also as per ayurveda eating Gulkand during summer keeps the body away from heat stroke. Roses are so beautiful in themselves. Thanks Refika, you explained the rose water extract process so beautifully.

    Morocco is famous for its rosewater too. The southern area around El Kelaa de M’Gouna in the High Atlas Mountains is known as the Valley of Roses where they specialise in producing rosewater. They have a 3-day Festival of Roses in May.

    Refika, might I suggest reversing the hoses on the pot so that the coldest water is going in the bottom. That is how a heat exchangers work best. I'm not sure of the terminology but it has to do with cross flow and the rose water dripping out should be the same temperature as the water cooling it. Thanks for your video my wife watches all the time, I can't wait to try some dishes!

      I think it is done like that to make sure that the tubes are always submerged while having the option to decrease the water flow. Mounting the water supply at the top requires you to maintain a minimum water flow to keep the tubes submerged but if its from the bottom you can lessen the water flow.

    I put fresh petals in pure water in a large glass jar. I left it in the eastern sun on my window for two days, and had a beautiful pink rose water. I keep it in the fridge, for baths, and face toning, but I’d love to try distilling the oil.

    That was such a fun video! I will have to start saving back my rose petals. I have two very fragrant roses in my garden. One very deep red and another creamy white.     Nice video, I can just imagine the scent.
    Though you show in the information on how to get a still in the UK, you need all sorts of rectifiers licences & inspections in case you're also making alcohol or fuel here in the UK. Also to make sure you're doing it in a safe manner as fires & explosions aren't unheard of.

    I distilled for a few years and tested a lot. The instructions in all German books say that you should not distill rose petals in the flask, but directly in the water. If I distil again next year, I will try it in a flask as well. I use rose water several times a day and spray it straight onto my face from the fridge. In summer there is a wonderful freshness. Rose water is also good for the eyes, so I spray the eyelids too.
    I liked to make footbaths from the remains of rose petals, rosemary, sage blossoms or wild herbs. Or I kept half of the distilled herbs in a bowl in the fridge or in the bathroom so that the scent was distributed there.
    I always keep my distillates in spray bottles in the fridge. No scent can escape and no bacteria can get in. And if I want to perfume a rice pudding just before serving, for example, I spray it on briefly. This also works great with the rim of coffee cups if you have distilled cinnamon or cardamom, for example. The kitchen with distillates is a magical world! There is not enough space here to give you my ideas and recipes, but you are so incredibly creative, you will know a lot yourself.

    Refika, you are absolutely correct about frequency. It's not an easy concept for many people to understand but basically the higher the frequency, the better you feel. Eating fresh produce and being around plants and flowers is wonderful. As much as I love roses and orange blossom even more, I can't say I love it in food. I bought a bottle in the shuk and my cake turned out smelling like room spray.😂

      It's not a concept that can be understood because it doesn't have a basis in reality. It's not something that can be measured like Refika claims in the video, because it doesn't exist. But I suppose there is little harm done either way, as long as it helps people stay away from processed foods.

    This is wonderful Refika! I have just been in my garden here in the UK (and yes, the sun is shining!!) and I have a wonderful rose in the garden which is very heavily scented. Recently I used the flowers on top of a special cake and it smelt and tasted divine! I love everyone's stories and recipe ideas! Is it possible to visit the rose fields? The air must be filled with the scent for miles! Best wishes to you all. X

    Portland Oregon in the US is known as the City of Roses. They provide all the roses for the barges in the Rose Bowl Parade. The gardens there are beautiful also.

    I had baklava in Greece that was sprinkled with rose water. When I was 7, my grandmother bought me rose water on the pharmacy and that was the only fragrant I was allowed to use until I could buy my own perfumes.

      Golab makes perfect sense in Turkish. Gol is gul (rose) in Turkish, and we still the use the word ab, which means water. After your explanation, one can see that the name of the famous Indian/Pakistani dessert golab jamon is also related to rose water. Just by looking at words like this one can see the cross-cultural influences and exchanges that took place in the region for centuries. All the best.

I also use pure essential oil “ rose” in my face cream. Would love to make that. Soooo expensive. But it only a takes 5 drops. Maybe I can do someday. Does that distiller also make oil?

      I'm not an expert on this, I'm just speculating. SHe said don't wash it while cooking because oil and odor are getting into the water, even if it's a little bit. She also took some time to collect leaves for this process and to protect the leaves, she wrapped them and kept them fresh in the fridge. I doubt it will dry out if you don't let the oil and smell pass into the water. and water vapor will pass through it. Like I said I'm not sure, just an opinion

    This is a Damascus rose..largly knowen in Syria as well, and we also use it in sweets. Try rose drinks as well. Warm or cold..we have it both ways..
    There are rose farms in Syria and they have festival as well related to this rose..
    Two years ago the damask rose was inscribed on UNESCO intangible cultural heritage and they have artical talks about the practices associated with this rose in Al-Mrah village in Syria...🌸
