Here is a quick Jamaican Rice & Peas recipe. Made using canned kidney beans for those days that you forgot to soak your beans overnight and simply don’t have enough time on your hands to cook them down until they’re tender.
This recipe is rich in flavour, made with creamed coconut and the authentic fragrant flavours of thyme and scotch bonnet.
Ingredients:
800g canned kidney beans
100ml water
200g creamed coconut
1 onion, chopped
6 cloves garlic, minced
3 sprigs of thyme
1 spring onion
1 scotch bonnet
1 tsp salt
1 tsp black pepper
500g long grain rice, washed and drained

Amazing tasty authentic Jamaican rice and peas, shelly well cooked just how I like it, scotch bonnet pepper gives that lovely flavour not to mention the coconut cream oh wow excuse me, this is a winner in my opinion.

Hiya. I half the whole recipe as this was just too much. I use a whole can of coconut milk and fill half way up with water swirl around and that does the job.
Very classy and good especially when prepared with coconut milk.

The recipe is super simple, and actually is really well done, but the problem is with the quantity of rice that is used. There’s simply isn’t enough water for the rice to boil. Also, I do recommend reducing the amount of creamed coconut.

The only problem I ever have when making this is my water to rice ratio. Too much water it’s mushy when done. Not enough then it’s crunchy. I’m try tho method and see if it helps.
Easy fix. you measure cup of rice and same ratio of water goes in.
3 cups of rice 5 cups of water. So maybe after you season and your kidney beans are soft, extract all the water out and pour 5 cups of the extracted water back in with 3 cups of washed and soaked rice then cook on a high heat till 80% cooked then put a tea towel over then a lid and cook on a low heat for 13-15 mins. Turn heat off let it sit for a few minutes remove lid and it will be perfect
Double water to rice. Then don't stir it, just leave it until it boils the water out.
They are techniques on yt for that. The fingernail technique is one of them and with practice. And all Rice's are not created equal! Some type of rice requires more or less water
And after it has finished boiling, don't remove lid for at least 15 mins

Dried kidney beans are widely available in cities in the UK. Can get them from supermarkets, local Caribbean shops, African shops and Asian shops.
Can imagine in more rural areas they're harder to come by.

Because the pepper is whole and not chopped, it adds very little in the way of heat. It’s a subtle flavour.

What if I only got coconut milk I'm a can and not coconut cream..how does that work?
Still works. I would still advise letting the coconut cook for about 5 mins after adding since some of them in the can come with clumps.
Coconut milk works well. For those that don’t know it’s available in cans at the grocery store.

You can use coconut milk in a can aswell. You can find it at wholefoods or most caribbean aisles in the supermarket

I followed this video step by step yet my rice burnt. What did I do wrong or what aren't you showing/explaining?
You have stir constantly remember you are using coconut milk and not just water also make sure you don’t have the fire too high
Put on very low heat.. I have a gas hob and could barely see the flames I had it on so low.. Need to try and get a very gentle simmer, and remember to stir regularly 😊
This happened to me. All that work…video wasn’t clear
When you have the heat up high make sure to stir. Then once you turn it down you can let it sit. Especially with the sugar content in the coconut cream However, Thats the case for most rice dishes i believe
Tried this and my scotch bonnet pepper popped and made it spicy like very spicy what did I do wrong ?

Do not put it on high heat for ten mins. You’ll burn the rice. Five mins is fine.
