Leave the cream cheese out for 1 to 1.5 hours before having to add other ingredients. It's a lot easier to cream at room temperature. 2. Wait for the Cheesecake to completely cool, then refrigerate at least 6 hours before slicing into it. 3. Three day old Cheesecake is when it's the best (ie. cook on Monday, eat.on Thurs), especially when you are mixing it with other flavors like pumpkin or chocolate, etc....
It was a win. Even my picky, non-keto family member went back for a second piece. I used swerve granulated in the crust, swerve brown in the pumpkin, and powdered swerve in the cream cheese.

About LMNT, information has come out recently that it contains a significant amount of maltodextrin, and they were not disclosing that, which can be a problem for people who are allergic to maltodextrin or are diabetic. I’d pretty much say most RUclipsr’s, like Dave, aren’t aware of this yet. I’m in Canada, and my daughter loves the stuff. Spends big $$ to order. Had to tell her about this. For ordinary people, it’s not great, but for me, being type 2 diabetic, bad news. Would certainly spike my blood sugar. And definitely NOT keto!!!

I have made the pumpkin bread. I used milk protein powder and whey protein instead of the flours and did pumpkin spice plus cinnamon. It was delicious.

Gonna have to try to make the crust with coconut flour as almonds are high in oxolate. I made the cottage cheese pumpkin bread and agree it needed more pumpkin flavor. So glad to hear the chocolate medley is available again at LMNT. We add a touch of cream to our "hot chocolate" and only use half a packet. Tastes delicious and more economical for us. I also use the chocolate LMNT in my keto ice cream cups.

vanilla question. Yes. BAking vanilla is Madagasgar variety which can be heated and still taste good. Strong flavor. The vanilla you should use in things like frosting, cold beverages, etc is Tahitian vanilla. Its milder, sweeter and does not do well if heated.
It would be a good challenge one day to try recreating a keto vegetarian minced meat to avoid textured soy and tofu. I once tried to make a sort of minced meat with cottage cheese, coconut flour, and eggs, and added smoked paprika, sautéed onions, and mushrooms. I’d love to see your version!
I made this today and it is VERY decadent just like Dave said. I will probably add a bit more allulose next time but it's still amazing as is, I highly recommend it. Thanks Dave, you're awesome and love your recipes!

I made this today but I totally butchered the recipe. 😂 I doubled the amount of pumpkin filling and added about 1/4 cup of cream to it and I omitted the cheese cake layer turning this into a basic pumpkin pie. Totally did the trick! Curbed my craving for pumpkin pie!! Thanks Dave. 😀

Ooo I tried a food network low carb low sugar pumpkin pie. It had a pecan crust. It was pretty good the crust burnt in some spots and didn’t fully praline- ize but the filling was good and overall I’d try it again soooo… in case someone came across and needed an opinion 🦃

The only "requirement" for the sweetener would be that it should be granular - because you need the structure that that version provides. (BTW- make sure you use an allulose blend when you make the crust as allulose tends to "brown" very easily.)

The bottom of your crust is so brown because allulose browns very easily. To avoid this in the future, use a different sweetener or use an allulose blend.
Crack the eggs on the granite counter or something else flat, and not the edge of a bowl or pan. The bowl drives shards of eggshell into the egg almost always giving you shards in your recipe.

Allulose can over brown when baked. Maybe use a 50/50 blend?

FYI: The raw LMNT and the sparkling version are clean. The flavored ones have maltitol. Some people experience bad side effects from that additive.

the recipe needs amounts added for ea ingredient.
What isnt really known about LMNT is they put Maltitol/maltodextrin in their flavored pouches.. not as clean as they claim.
