- Long Paddock Cheese is a small-scale Australian artisan cheesemaker, based in Castlemaine, headed by French/Australian cheese guru, Ivan Larcher. They make & mature a range of soft & semi-hard cheeses & fresh dairy products. Their products are made with French flair and skill but have an Australian identity. They sell through our on-site shop, at farmers' markets, our online cheese club, direct wholesale and interstate through distributors. Attached to Long Paddock Cheese is their dedicated training facility, The Cheese School, where their cheesemakers teach professionals and beginners the science, art and secrets of great cheesemaking.

As a retired chef, I can't overstate the importance of those first human beings who discovered how to ferment foods to improve their digestive properties, as well as aiding in preservation before chemical and mechanical refrigeration became affordable for anyone but the very wealthy.
Bread, beer, wine, mead, vegetables such as sour pickles, kimchee, & sauerkraut, meats, sausages, jerky, and not least of all, cheese. Especially hard cheeses which, when waxed and sealed, can be preserved for very long periods of time to offset the potential for starvation during the famine portion of the feast/famine cycle.
*Salt, yeasts, and bacteria* are the common denominators for virtually all preserved foods that don't require water bath boiling or steam pressure canning.
I don't think that most people under the age of 50, especially here in the United States of America, *the Land of Over Abundance;* truly understand how essential skills such as fermenting a portion of one's yearly vegetable harvest, cheese making, curing and smoking meats, and baking sourdough homemade bread were before store bought yeast was readily available. The same thing applies to sugar, especially refined white sugar, which truly didn't become affordable for the poor and middle-class in the United States until the early decades of the 20th century.

Long Paddock Cheese is amazing, my favourite Australian made cheese! Silverwattle and Driftwood are my absolute favourite! I've met Gaetan and Dom they are great people to talk to and are very knowledgeable about cheese making and the industry.
Thank you for allowing us all to travel along on the tour. Happy Birthday as well. Thank you very much for all the instruction and information on your channel. I have learned so much and have so much still to learn. I have begun to modify my root cellar to be an excellent aging area for cheese, meats and spirits. I'm very grateful for all the hard work on the Channel content.

this factory is HUGE,
y'know I've seen, visited and even worked in a cheese factory but this Long Paddock is on another level! back then i only saw 500 litre cheese vat with 20 liter capacity skimming machine, fortunately we did not even pasteurize the milk

In the US you just have to age raw milk cheese for a minimum period of time to make the "bad bugs" apparent.
