As a Racer myself, i can confirm all of what you say. I use Metzeler Interact K1/0 and Pirelli SC0 from 2410, with a Front from 2016, but all new and stored in the underground. Cant complain, get them for free and still do laps close to the national Championship. As long as they were stored well and are new (no heat cycles) they´re good to go.
The big benefit to me is that, when my NOS rear costs $100, I'm not worrying about trying to eek out every last ounce of tire life. A day on each side and then I'll throw a new one on, even if I might be able to use it for another half a day or so.

Typically the people complaining about date codes are the ones running 15+seconds off pace anyway.
You’re not wrong lol
Same, except they're like +35 seconds off pace where I am at lol.... like dude. Shut up and ride the damn horse
Disclaimer: while this was sCiEntIfIc, you're still slow and I'm not responsible for your tire choices.
