RECIPES FROM THIS VIDEO:
Day 1
--------------
Braised leek:
-600g leek, cut in half lengthwise and horizontally
Fry in some oil for a few minutes.
Braising liquid:
-3 cloves chopped garlic
-1/2 Tsp Chili flakes
-5 Tbsp soy sauce
-2 Tbsp vinegar
-2 Tbsp agave
Add it to the leek and let it simmer 5-10mins
Tofu:
-400g Tofu, geared into chunks
-2 Tbsp corn starch
-a touch of oil and salt
Mix and bake at 175C/350F for 20 mins.
Mix with 1/4 cup (60g) BBQ sauce.
Bake for 5-10 more mins.
Serve everything with rice
Day 2
-------------
Vegan chick‘n pasta:
-1 onion
-2 cloves garlic
-350g vegan chicken
First fry the chicken in oil for a few minutes, then add onion and garlic.
-2 Tbsp tomato paste
-a Splash of vegan red wine
First roast the tomato paste for 1-2mins, then deglaze with the red wine
-3 cups (750ml) tomato sauce
-salt, pepper and dried herbs to taste
Let it simmer 5-10mins.
Serve on pasta
Beetroot salad:
-shredded beetroot
-olive oil
-lemon juice
-agave
-salt and pepper
Day 3
-----------
Shredded tofu burrito bowl:
-400g firm tofu
Pat dry it and shred with a grater.
-2 Tbsp soy sauce
-1 Tbsp oil
-2 Tsp cumin
-1 Tsp Paprika
-salt to taste
Toss around, spread on a baking sheet and bake at 350F/175C for 30mins (give it a stir every now and then).
Sauce:
-1 onion
-3 cloves garlic
Fry in some oil until softened.
-1 Tsp cumin
-1 Tsp Paprika
-1/2 Tsp chili powder
-2 Tbsp tomato paste
Roast 2-3mins
-1/3 cup (80ml) pineapple juice
-1/2 Tbsp soy sauce
Stir it in and bring to a bubble.
Then reduce the heat and stir in the baked tofu.
Cauliflower:
-1 head of cauliflower cut in florets
-2 Tbsp oil
-1 Tsp each salt, cumin and paprika
Mix and bake at 175C/350F for 25mis
Arroz rojo:
-1 cup rice
Toast in some oil
-1 onion
-2 cloves garlic
Sauté for a few minutes.
-1 Tsp paprika
-salt to taste
-2 Tbsp tomato paste
-1 cup each water and tomato sauce
First toast the spices and tomato paste.
Add the liquid and optionally place a chili on top.
Cook on low heat 15-20mins.
Serve everything with your favourite sauce (I made a vegan garlic-sriracha sauce)
Day 4:
-------------
Cracked lasagna pasta:
-200g veggies of your choice
-70g smoked tofu
Sauté in some oil
Sauce:
-1 (70g) jarred roasted pepper
-1 Tbsp hummus
-a squeeze of lemon
-salt and dried herbs to taste
-pasta water to blend
Blend until smooth, add to the veggies along with pasta (or broken lasagna sheet pasta).
Day 5:
-------------
Ottolenghi inspired eggplant:
-3 eggplants, cut into thick slices
-6 Tbsp oil ( I used peanut oil)
-salt to taste
Roast at 230C/450F for 45-50mins
Curry yogurt:
-4 big Tbsp vegan yogurt
-2 Tsp vegan mayo
-1/2 lime
-1 Tsp curry powder
-salt to taste
-1 Tsp agave
Curry onions:
-3 onions, cut in slices
Fry in oil on medium heat until slightly caramelised.
Season with curry powder.
Serve with couscous and a protein source of your choice.

Little tip from Italy: just toss your rinsed pasta in the sauce’s pan, still on low heat; this way it will soak up the flavours muuuch better than just pouring it over your pasta in the dish 😊
The pasta should be 1 minute pre al dente to cook a bit with the sauce in the pan (didn’t watched the video yet) (0:24) „-„

Not a vegan but it all looks sooooo delish! Trying to think of using the flavors with lower carb, gluten free and (since not a vegan) without chicken but maybe turkey meat. Chicken upsets my stomach.

Thank you for all your recipes. I'm not vegan but my cholesterol is super high & I have to change the way I eat. I definitely don't get enough vegetables in my diet so your recipes are really helping me on that score. I can't eat soy products & I hate chickpeas. Can you suggest any alternatives? Please thank your Mutter for her beetroot salad. I'm going to make it today. 💐💐💐
Lentils or other legumes like black beans, kidney beans or pinto beans are a good alternative to chickpeas. Seitan or processed meat alternatives made with wheat or pea protein could replace tofu
@@ixmay1023 Thank you so much for the info. I love lentils & legumes. Black & Red beans are my favorites. I've had bread made out of seitan. I didn't know that it was used as a chicken substitute. Do they sell them in regular grocery stores or do I need to go to a Trader Joe's-type place? Thanks again. If you can think of any other substitutes I would appreciate your sending them my way.
Just a heads-up in case you think/your doctor made you think you can't have soy bc of your higher cholesterol levels...soy is actually found to be reducing cholesterol.

You can look for recipes of breads made purely out of lentils (brown or red), so you can also incorporate them in other dishes or meals, reducing also your flour ingest if that is something you need. You can also look for tempeh made out of other things other than soy. It has a really strong flavour but maybe you like it! You can also look for recipes of cream cheese's replacements made out of white beans, sunflower seed or caju nuts :)
@@Tom1573realist I can't have soy products due to stomach issues, not my cholesterol. For a while, I ate a tremendous amount of soy products & I almost wound up in the hospital. UGH. Trying to figure out what I can & can't eat is problematic for me. It's mostly trial & error. Thanks for the info though.

I don't like cooked leek as a dish on it's own(in soup or lasagne etc it's ok). But this kinda looks good plus you use flavours i love so gonna try it.

I just wanted to comment on something I didn't know until recently but the Huy Fong sriracha is in fact not vegan :( I don't see many people talking about this because most sriracha sauces should be vegan but this one in particular has bone char!! 😢 I love your videos and recipes so I thought I'd share this...

Darf ich dir ein Kompliment machen, ohne dass das creepy rüberkommt? Ich bin weder Vegetarier noch Veganer und gucke trotzdem deine Videos.
Mir gefällt deine positive Art, wie du den Menschen veganes Essen näherbringst. Vielleicht kennt du ja den Kanal der "militanten Veganerin" Raffaela, die in ihren Videos Leute auf der Straße konfrontiert und teils heftig beschimpft. Mich würde sehr interessieren, wie du zu dieser Person stehst und ob du ihre Videos gut findest oder eher nicht.
Was mir gefällt, ist, dass du niemanden versuchst zu "bekehren". Stattdessen machst du uns "Fleischessern" mit deinen veganen Rezepten Appetit und zeigst uns, wie man ohne Tierprodukte kochen kann. Wenn ich deine Videos sehe, bekomme ich Lust, vegane Rezepte auszuprobieren, und zwar nicht wegen des Tierleids oder um die Umwelt zu schützen, sondern weil man einfach Bock hat, sich ein bisschen gesünder zu ernähren und neue Dinge auszuprobieren.
Vielleicht solltest du ja ein Restaurant aufmachen, ich würde kommen ;)

I followed you a while now. And although you eating vegan, it is not necessarily healthier than a non vegan diet. I am very surprised by the lack of whole grain products your eating. White rice, making white bread, eating white pasta dishes..... Such a mist opportunity.

@@hh-ms3ub Why do you want to imitate the results of animal cruelty? It is very hypocritical to associate vegan recipes with the results of animal cruelty (killed chickens). Vegan recipes are made with plants and fungi. All vegan recipes should be named after the included plants and fungi.
@@TheFettuck this is how marketing works. If you think economically, labelling a product as vegan chicken or vegan meat makes it much appealing to buy. They are finding a better substitute by making ‘meat’ by plants making it better for the environment and also excluding animal cruelty.
I LOVE this kind of videos, thx for blessing us with another one ! I was also happy to see seasonal (european) vegetables like beetroot, leek and cauliflower. I try to eat more sustainably and getting my veggies local and in season is definitely important for me. Plus, I find winter tomatoes so bland ! Keep up the good work Maya, you're a great food blogger
I used to keep those same tomatoes in a basket (preferably in a single layer!) in my boiler cupboard, where it always about 30°C, for 1-2 full days before I used them in the winter months. They'd always turn out the right softness and sweetness, every time. Hope this helps! 🙏
