There are lots of theories to explain why the young master took his brothers name but I'm just going to say my personal favourite. I actually thought the British accents the VAs did were pretty good, especially J Michael Tatum's Sebastian. My English dad says their accents are very believable and pleasant to listen to.
Black butler is very obviously based on the book Dr. Faustus, which is where Mephistopheles comes from. A contract with a demon or the devil is called a Faustian contract. Also not to mention claude faustus, even though with his character it doesn't quite fit. I personally think black butler is Dr. Faustus meets hamlet with some extra craziness thrown in. I love that fact about the guy who voices Sebastian, because my top 3 animes are black butler, soul eater, and tokyo ghoul. Also, Tsukiyama and Sebastian are some of my fav characters ever. The demon ciel change wasnt abandoned for the circus arc. Its anime exclusive and the end of the anime continuity. The circus arc is the anime adaption of itself from the manga which actually takes place sometime after the curry arc. It therefore occurs long before season 2.

16:25 I haven't seen the manga so I don't know if it was revealed there but in the anime on the last few episodes of season 1 counting the one where they visit Paris it reveals that Angelica/ash (don't know if her name's Angelica but you know what I mean) was the one who killed Ciel's parents with the queen because she wanted to "purify" them and make them "one", hense sewing them together. Black butler is very obviously based on the book Dr. Faustus, which is where Mephistopheles comes from. A contract with a demon or the devil is called a Faustian contract. Also not to mention claude faustus, even though with his character it doesn't quite fit. I personally think black butler is Dr. Faustus meets hamlet with some extra craziness thrown in. I love that fact about the guy who voices Sebastian, because my top 3 animes are black butler, soul eater, and tokyo ghoul. Also, Tsukiyama and Sebastian are some of my fav characters ever. I didn't really have any interest in Giriko (is that how you spell it?) until I read the manga, where I certainly find his character much more interesting and pivotal.

The demon ciel change wasnt abandoned for the circus arc. Its anime exclusive and the end of the anime continuity. The circus arc is the anime adaption of itself from the manga which actually takes place sometime after the curry arc. It therefore occurs long before season 2.

16:25 I haven't seen the manga so I don't know if it was revealed there but in the anime on the last few episodes of season 1 counting the one where they visit Paris it reveals that Angelica/ash (don't know if her name's Angelica but you know what I mean) was the one who killed Ciel's parents with the queen because she wanted to "purify" them and make them "one", hense sewing them together. It also shows in the anime, as Ash states, "nothing can be reborn without destruction" so they burnt not only England but the Manor to the ground...again. to sum it up Ash and the Queen "purifed and erased the "uncleanliness" from his parents and burnt the house to the ground.
Edit for #25: in the Campania Arc in the manga it is revealed by Sebastian's Cinematic Record that "Demons have a different taste then humans do" Which is why he relies on Ciel to tell him how things really taste when it compares to humans.
