Beef and Guinness

  • This traditional Irish favorite is a hearty delight! While it does require a lengthy cooking time, if you have the time to spare, I strongly recommend trying out this dish.
    Ingredients
    -4 cloves of garlic
    -3 celery stalks
    -2 carrot sticks
    -2 yellow onions
    -2 lbs beef stew meat
    -4 bacon strips
    -1/3 cup of flour
    -Black pepper
    -Salt
    -Teaspoon rosemary
    -2 bay leaves
    -1/2 cup of tomato paste
    -15 oz can of Guinness
    -1 1/2 quart of chicken broth
    1. Generously salt the stew meat and place it on a tray.
    2. Dice all the vegetables and set them aside.
    3. In a Dutch oven or large pot, brown the beef in batches.
    4. While the beef is cooking, cut the bacon into square pieces.
    5. Preheat the oven to 385°F/195°C.
    6. Remove the cooked beef from the Dutch oven or pot and add the bacon.
    7. Once the bacon is lightly cooked, add all the chopped vegetables and mix well.
    8. After the vegetables have cooked for 10 minutes, sprinkle flour over them and mix thoroughly.
    9. Incorporate the remaining ingredients.
    10. If a Dutch oven is unavailable, transfer everything to a large baking dish and tightly cover it with multiple layers of aluminum foil.
    11. Place the baking dish or Dutch oven in a preheated oven for 2 hours.
    12. Take the beef and Guinness out of the oven, and let it rest for 10 minutes.
    13. Serve over mashed potatoes or with crusty bread.
