    I’m trying to understand why is it necessary to blanch it. Everybody seems to do it but what is wrong with just blending chopped wild garlic with the oil?

      No need to blanch it if you don't want to, I often do it when making an oil as it sometimes helps to preserve the flavoured oil for a little longer :)

      Hey for this I just use a cold pressed rapeseed oil, I tend to steer clear of olive oil or any oil with a strong flavour as the wild ingredient ends up competing with the flavour already in the oil.
