Elderflower syrup

  • You can't help but admire the elderflower. It's so delicious, it smells wonderful and those tiny little flowers are so sweet. Literally! One of our favorites is the elderflower syrup. In this video I share my best recipe with you.
    There is a mistake in my video. If you find it, you get a virtual high five ;)
    What you need:
    elderflowers (25 bigger or 30 smaller ones)
    1 lemon
    100g sugar for the caramel
    as many kilos of sugar as there is juice (for 25-30 flowers you will need 3-4 kilos)
    citric acid
    clean glass bottles (In the end, there was about 5 liters of syrup)

    What could I use in place of sugar? Also, do you know if anyone has made syrup from honeysuckles? Nice video 👍🏽, thank you 🙏🏽.

      Great questions. In syrup, sugar is the preservative. You can use other types of sugar, such as brown sugar or birch sugar (xylitol). If you absolutely want to leave the sugar out of the recipe, just heat the juice up until it boils. And then add a sweetener of your choice. In this case, add a preservative. Sorbic acid is the best. Use 5g for 1 liter.
      You can make syrup from any flower that is edible. It can also be made from honeysuckle flowers the same way as it is made from elderflowers. If your question was about honeysuckle berry, you can also make syrup from it. I will make a redcurrant syrup video soon. It will be the same procedure for the honeysuckle berry as well. :)
