As a former employee about 25 years ago as a 16-17 year old High School student, mid 90’s, Kentucky Fried Chicken was the bomb, so flavorful and finger licking good. I had to call KFC around 2008-09 to complain about the quality, I asked to speak to the Kernel and was informed that he passed away and I told the Manager that I’m sure he’s rolling in his grave cause you’ve let him down! She said it had something to do with the new oil and trans fat laws!
It WAS delicious back then when I was still a hungry little kid. Now at my old age of 33, not anymore, and I don't know why...... Rather have a self-made, more delicious fried chickens at home. Lol.
Worked at kfc as a cook. Can confirm chicken is stored chilled not frozen in basically bags to what the product is. E.g Tenders are stored in a yellow bag in a quanity of 20. Your buckets of chickens is what we call in Australia anyways an '8 Head' which contains all the parts. Also usually had a bag just with drum sticks and thighs. Chicken was cooked at like 175-185 Degrees Celcius depending on the product, varying from 4 minutes (tenders) to 15 Mins (8 head) in those pressurised cookers. The crispy wings and zingers are cooked in an open deep fryer and not enclosed. Wings/Zingers/Drum sticks are double dipped to get that flakey look, basically putting in water - draining - placing in four. Do you 7-10-7 or in this case 7-7-7 since its spicey and not original and then place in a shaker. Move that bad boy back and fourth then back in the dip tray. Hit that with holy water - drain and repeat until you get to shaking the chicken. Place in these Oval cages since thats the shape of the cookers we had. Original chicken was done on flat trays since those cookers were square. Only product that is frozen is the chips, popcorn chicken, nuggets Also the gravy, basically all the shit at the bottom of the cookers the cooks clean out in the morning and throughout the day when they should do their drops and cleans. That gets stored and the oil drained. Those fines which is basically burnt chicken, spices, ect then gets mixed in with our insta gravy mix with some hot water. Mix that up and then drain it again to remove any fines when its thick and bottle that bitch up and sell it.
BUCKETHEADS FRY CHICKEN RECIPE: Recipe: 4LB CHICKEN 1.75 cup FESH ONLY ground in commercial blender wheat& 1/2 cup FRESH ONLY ground rice. Parboiled is best. 1 Tblspn HIMALAYAN mortar powdered salt. 3 TBLSPN spice. Emphasis on leafy green fresh medicinal herbs cayenne onion powder. I especially like fresh pick epazoate. 2tsp garlic powder. 1 Tblspn pepper fresh ground. *********************************** Eggs totaling 100g. 2 TBLSPN xtra vrgin olive oil. 1 Tblspn powder Himalayan salt. 1 (heaping) Tblspn mustard 2 Tblspn ketchup 1 Tblspn honey optional ************************************ Oil bath: 1.25 cup cold press wet mill coconut oil red palm KERNAL 50/50. KFC was very delicious probably 15 to 20 years ago. I used to have KFC at least once a week. For the past several years it's probably down to once every couple of months. KFC is far too focused on the number of restaurants it can open world wide instead of improving the quality of their product(s). KFC used to have good fries. Not anymore. Same can be said about their salads. And lastly, did KFC really have to cut the chicken thighs in half????

My family had a lot of chicken dinners.

My parents took me to a KFC in Canada in the mid-1960s. It was in the Niagra Falls area. This was for lunch and I couldn't believe it when they said they were out of fried chicken. We went to another restaurant after that.
I'm not sure if there's any allergens in msg but I get really nauseated with a pulsing headache whenever I had a dish laced with msg. Not to credit these smear campaigns, cause they're horrible imo. But I don't see why some people prefer msg over salt & sugar.
Cindy hey, personally i prefer MSG over salt because its literally tastier in every way. It’s basically a super salt. yes MSG can be allergenic in rare cases for some people and obviously if this is you thats very unfortunate but there is a chance its actually dehydration in which case you could just drink more water. I highly recommend you schedule an allergen test with your Doctor to find out if you are really allergic or not!

They don't use the original recipe today. The coating is not as good. Also the chicken is to greasy today. It's not good anymore, and it too expensive...
THe key to KFC flavor, is not simply the list of herbs and spices, but rather how those herbs and spices are used. Its what you dont see that trips people up. First, the chicken must be Brined in those ingredients. Ask youself where does the KFC flavor exist when eating. A lot is in the breading, and a good amount is in the meat but mostly in the breading. So the chicken gets a brine to absorb those flavors but the breading gets a good dose as well. But we also see that the flour is very white so some of those spices are not applied to the flour. Lastly its the cooking itself that merge the flavors throughout. Pressure cooking. Plain and simple your not going to achieve a KFC result without using what they depend on for cooking, And thats pressure cooking, which greatly boosts flavors. much of that flavor must remain in the cooking oils as well. Consider the fact that Sanders had to have simple ingredients due to what was available to local businesses at the time. few if anything would be some exotic hard to get ingredient. Fast cooking requires things like flavored cooking oils, salts, bines, and lite flours.
I bought KFC two weeks ago, I was furious when I saw my chicken, my annoyance sky rocketed when I bit into it. It's the saddest piece of fried chicken I've ever eaten, still can't believe I wasted my money on something like this

No matter how many times I eat Popeyes I always & I mean always make my way back to good old KFC. Can't help it....it'z one of the fast foods I grew up eating. Even though it does taste a lil different now days. I still stand by them bcuz I'm a loyal person. Can't wait to try their take on the chicken sandwich! The double licious will do for now tho.
KFC fries are usually terrible though. They go soggy in minutes and tend to be really greasy most of the time. Sometimes you might get lucky and get crispy ones.. But that's been rare in my experience.
You're tasting 11 herbs and spices+MSG. That's what has you going back for more. Sure, the body digests it fine. However, what it does to your brain is what raises questions for me. If it effects the part of your brain that controls addiction, maybe you could become addicted to foods like this. Thus, addiction could be the vehicle for MSG to spark some VERY alarming side effects/health risks. That's scary. It's scary because I'm a foody. I love food. I'm guilty of indulging in stuff like this, as well. I just think it's interesting how addicted humans can be to food. I don't want to be addicted to anything.

When I worked there it was cooked in shortening, not oil. There is also icing sugar in the mix, powdered milk and lots of salt and MSG.

THe key to KFC flavor, is not simply the list of herbs and spices, but rather how those herbs and spices are used. Its what you dont see that trips people up. First, the chicken must be Brined in those ingredients. Ask youself where does the KFC flavor exist when eating. A lot is in the breading, and a good amount is in the meat but mostly in the breading. So the chicken gets a brine to absorb those flavors but the breading gets a good dose as well. But we also see that the flour is very white so some of those spices are not applied to the flour. Lastly its the cooking itself that merge the flavors throughout. Pressure cooking. Plain and simple your not going to achieve a KFC result without using what they depend on for cooking, And thats pressure cooking, which greatly boosts flavors. much of that flavor must remain in the cooking oils as well. Consider the fact that Sanders had to have simple ingredients due to what was available to local businesses at the time. few if anything would be some exotic hard to get ingredient. Fast cooking requires things like flavored cooking oils, salts, bines, and lite flours.

No matter how many times I eat Popeyes I always & I mean always make my way back to good old KFC. Can't help it....it'z one of the fast foods I grew up eating. Even though it does taste a lil different now days. I still stand by them bcuz I'm a loyal person. Can't wait to try their take on the chicken sandwich! The double licious will do for now tho.

KFC fries are usually terrible though. They go soggy in minutes and tend to be really greasy most of the time.
Sometimes you might get lucky and get crispy ones.. But that's been rare in my experience.
Only started eating KFC last year, it's great in the UK!

You're tasting 11 herbs and spices+MSG. That's what has you going back for more. Sure, the body digests it fine. However, what it does to your brain is what raises questions for me. If it effects the part of your brain that controls addiction, maybe you could become addicted to foods like this. Thus, addiction could be the vehicle for MSG to spark some VERY alarming side effects/health risks. That's scary. It's scary because I'm a foody. I love food. I'm guilty of indulging in stuff like this, as well. I just think it's interesting how addicted humans can be to food. I don't want to be addicted to anything.
