- No-bake Stracciatella Cream Cake - light, creamy and refreshing cake perfect for hot summer days 🤩 🥳
Ingredients:
4.5 oz (130 g) semolina
1.5 oz (40 g) vanilla pudding powder
1 1/4 cup (300 ml) milk
3 cups (700 ml) milk
6.5 oz (185 g) sugar
1 tbsp orange zest
8.5 oz (240 g) unsalted butter, room temperature
about 2/3 cup (160 ml) freshly squeezed orange juice
about 40 Petit-Beurre biscuits
17.5 oz (500 g) heavy cream
3 oz (80 g) powdered sugar
5.5 oz (150 g) dark chocolate - 65% cocoa, finely chopped into pieces and small slivers

Stir together semolina and vanilla pudding powder. Add milk (300 ml) and mix well to combine.
Bring the rest of the milk (700 ml) and sugar to a boil.
Once the milk boils, reduce the heat to medium-low and add semolina mixture, stirring constantly.
Cook for about 3-4 minutes, stirring constantly, until it thickens.
Remove from the heat and stir in orange zest.
Set aside to cool.
Strain freshly squeezed orange juice.
Beat the butter until light and creamy. Gradually add semolina mixture.
Beat heavy cream. Greadually add powdered sugar. Beat the cream until stiff peaks form. Using spatula, stir in dark chocolate.
Dip each biscuit in orange juice for 2 seconds and shake off the excess juice.
Arrange half of the biscuits in a 11 x 7 in (28 x 18 cm) adjustable cake mold or baking pan. Cut the biscuits at the end of row to fit, so it will be 4 rows of 4.5 biscuits each.
Spread half of semolina filling over biscuits.
Spread heavy cream on top.
Arrange second layer of biscuits (dip each biscuit in orange juice), spread remaining semolina filling and then remaining heavy cream on top.
Refrigerate overnight.

I hate Semolina , since school days . I would never eat it . My dinner lady would push the spoon in my mouth , I would keep my lips tightly together .
Sorry for saying so , , , the texture is like wet thick sand .
Of all the Delicious ingredients to make a cake with , , Semolina , , is not one , in my opinion .
Strangely when I saw the word Semolina , BAD memories come to mind .
I Understand everyone , wants to invent a dish , ie a cake , a pudding , that is there signature, dish , and there’s alone . But not Semolina , there’s nothing delicious , about Semolina nothing .

Your dinner lady didn't know to prepare semolina properly :) Semolina in basic recipe tastes totally different than combined with vanilla pudding, orange and other ingredients like in this cake. I love everything with semolina, basic recipe, cakes, pies... It is healthy (not in cakes obviously, cos of sugar :)) and you can have many benefits from it. But we all dislike to eat some food so i understand :)
