@ 7 minutes in you can clearly see through the bedroom floor through to down stairs and the planking looks like it's buckling and has issues.

I believe the flooring is 5/4" tongue and groove. The ceiling from the first floor is the flooring on the second floor. It is pretty common to see small gaps like this as the wood dries and shrinks a little. This style flooring is common for post and beam / log homes. It is not buckling nor unsafe.
