I completely love your original take on plain old bruschetta really enjoyed the use of bacon along with the cardoman and really enjoyed the mascarpone cheese instead of the mozzarella this is a keeper Great tip on cutting cherry tomatoes I’ve never seen that before
Hi Jeff, Thanks so much :) I'm really glad that you liked the recipe :) The bacon and cardamom definitely change the dish quite a bit and the mascarpone rounds it out nicely......I learned how to cut tomatoes like that way back when I first finished Culinary School. I started off in the pantry (for my internship) and had to cut several pints of pear tomatoes a day. I was so happy when the Chef there showed me that trick lol!

Sometimes I am nervous to say bruschetta the right way because everyone says it the other way haha :) I love this recipe so much! I definitely need to try this ! I absolutely love the idea of the paste this makes it so much easier to eat. Absolutely excited about the bacon ! Bruschetta has to be one of my favorite and you just made it even better !! ♡
LOL, I get the same way about pronouncing it correctly sometimes at restaurants but I've decided it's easier to have the server look at me like I don't know a thing about food then to have my husband tease me about it for the next 10 minutes lol.....I hope that you get a chance to try it, it's really yummy and full of bacon flavor. I'm excited to try that Greasy Bread/Szalonna Bread that you just made - yum! I love this type of food too :)
